Strawberries have always had a special place in my heart. As a child, I watched Strawberry Shortcake on TV and played with the doll. I would pick them by the gallon from our garden, then eat as many as I could while they were fresh, freezing the rest to eat during the winter.
I’m always looking for flavorful ways to cook inexpensive cuts of meat in THM-friendly ways, and these Slow Cooker Pork Carnitas fit the bill perfectly. So tender and full of flavor, with tons of citrus and an almost-smoked texture, they are great for feeding large crowds, or for having leftovers of later in the week.
When I’m not gobbling down Vanilla Ice Cream, I usually turn my attention to something even better: Trim Healthy Mama Chocolate Ice Cream. There are endless ways to use a basic Chocolate or Vanilla Ice Cream – from adding toppings like Hot Fudge, Caramel Sauce, Peanut Butter, Berries, and more.
