- 12 Slices Ham
- 6 Eggs
- ½ cup chopped Ham (about 4 oz)
- ¼ cup chopped Green Onions
- ½ cup Shredded Cheese
- Salt & Pepper, to taste
- Preheat your oven to 400 degrees.
- Place one slice of ham in each hole in your muffin tin - using the ham like a cupcake liner.
- Mix together the eggs, chopped ham, green onion, cheese, salt, and pepper and beat well to combine.
- Pour the egg mixture into the ham-lined muffin tin. Each cup should be full.
- Bake for 15-18 minutes, until eggs are cooked through and the edges of the ham starts to brown.
- Store in an airtight container in the fridge for up to 1 week.
