With a mixer, combine the chicken, almond flour, feta cheese, sun-dried tomatoes, and chopped spinach until well combined.
Shape into 4 patties, lightly salting and peppering each side.
In a skillet, melt enough coconut oil to cover the bottom. Cook each burger for approximately 4 minutes on each side. Serve while warm either by itself, or in a Joseph's Pita.
