Keto Dreamsicles
{THM:S, Low Carb, Ketogenic, Sugar-Free, Dairy-Free}
Orange Dreamsicle popsicles were a staple of my childhood – hopefully they were a part of your childhood too!
The sweet and creamy flavor combined with the heat of the summer made for an impossible-to-resist combination that I indulged in most day during my childhood.
My Keto Dreamsicles are so good, they’ll take you back to childhood – and you won’t miss the carbs!
The goal with these is for them to turn out creamy, not icy like some of my other Keto Popsicles.
Of course, they also contain tons of healthy ingredients that my 4-year old doesn’t even notice!
You will need a popsicle mold to make these, and the number of popsicles the recipe makes will depend on how large you molds are.
I used these Silicone Popsicle molds because I love the size, shape, and the fact that they’re silicone.
It makes 10 individual 3-oz popsicles, which I find is a good size for adults and kids.
I also used wooden popsicle sticks (the silicone mold I linked to comes with 30 free wooden popsicle sticks, which means one less item I have to purchase (at least until those run out!)
I used macadamia nut milk and coconut milk in this recipe to make it Dairy-Free, but you could very easily substitute another nut milk for the macadamia nut milk:
And for the coconut milk, you could substitute:
- Coconut Cream
- Heavy Cream
- Half and Half
The substitutions are pretty much endless!
Here’s what you’ll need to make Keto Dreamsicles:
- 2 cups Full-Fat Coconut Milk
- 2 cups Macadamia Nut Milk
- 1 T Orange Extract
- 2 tsp. Vanilla Extract
- 2 T Stevia Glycerite (or a bit more, to taste)
- 3 drops yellow food coloring + 1 drop red food coloring (optional, for color only)
- ½ tsp. Sea Salt
Directions:
Combine all ingredients, blend if necessary.
Fill popsicle molds, then refrigerate 4 hours until frozen through. Enjoy!
