THM Pecan Pie Bars (THM:S)

Just because you can't have sugar doesn't mean you can't have Pecan Pie bars on THM - I give you THM Pecan Pie Bars!
Ingredients
  • Caramel Sauce:
  • 1 cup Gentle Sweet (or equivalent)
  • ½ cup Water
  • ½ cup Heavy Cream
  • 1 tbsp Butter
  • 2 tbsp Vegetable Glycerin
  • ½ tsp Vanilla Extract
  • ¼ tsp Xanthan Gum
  • Filling:
  • 2 Eggs
  • 2 tbsp Melted Butter
  • 1 tbsp Unsulphured Molasses
  • ½ tsp Himalayan Sea Salt
  • 1 cup Pecans
Instructions
  1. To make the caramel sauce, combine the Gentle Sweet and water in a saucepan over medium heat.
  2. Let the sweeteners dissolve and then stir until the mixture comes to a boil. Boil 9-11 minutes, until mixture darkens slightly.
  3. Remove from the heat and add the cream and butter. Stir in the vegetable glycerin and vanilla, then add the xanthan gum.
  4. Let the mixture cool 20-30 minutes while you prepare the rest of the pie filling.
  5. For the filling: whisk the eggs, melted butter, molassas and salt - then poor into the cooled caramel sauce.
  6. Sprinkle your prepared crust with the pecans, then poor the filling mixture over the entire crust. Bake for 20 minutes at 325.
