THM Pecan Pie Bars (THM:S)

- Caramel Sauce:
- 1 cup Gentle Sweet (or equivalent)
- ½ cup Water
- ½ cup Heavy Cream
- 1 tbsp Butter
- 2 tbsp Vegetable Glycerin
- ½ tsp Vanilla Extract
- ¼ tsp Xanthan Gum
- Filling:
- 2 Eggs
- 2 tbsp Melted Butter
- 1 tbsp Unsulphured Molasses
- ½ tsp Himalayan Sea Salt
- 1 cup Pecans
- To make the caramel sauce, combine the Gentle Sweet and water in a saucepan over medium heat.
- Let the sweeteners dissolve and then stir until the mixture comes to a boil. Boil 9-11 minutes, until mixture darkens slightly.
- Remove from the heat and add the cream and butter. Stir in the vegetable glycerin and vanilla, then add the xanthan gum.
- Let the mixture cool 20-30 minutes while you prepare the rest of the pie filling.
- For the filling: whisk the eggs, melted butter, molassas and salt - then poor into the cooled caramel sauce.
- Sprinkle your prepared crust with the pecans, then poor the filling mixture over the entire crust. Bake for 20 minutes at 325.
