Ingredients
  • 1 Carrot, Grated
  • 1 Head of Cabbage, chopped
  • ½ cup Mayo
  • 1 T Apple Cider Vinegar
  • 1 T Lemon Juice
  • 1 tsp. Dijon Mustard
  • ½ tsp. Celery seed (optional)
  • 1 T. Swerve
  • Salt and Pepper, to taste
Instructions
  1. Shred coleslaw. Dice into cubes, if desired. Grate the carrot. Set the vegetables aside.
  2. In a medium bowl, mix the mayo, apple cider vinegar, lemon juice, dijon mustard, celery seed, swerve, and salt and pepper. Mix well until Swerve is dissolved.
  3. Pour the dressing over the cabbage and carrots. Toss to coat the salad with dressing.
