Skillet Chicken with Mushrooms, Bacon and Thyme Sauce

Ingredients
  • 8 Boneless, Skinless Chicken Breasts
  • Salt and Pepper, to taste
  • Ghee
  • 1 cup heavy Cream
  • 8 ounces sliced Mushrooms
  • 3 slices Bacon, cooked and diced
  • 1 tsp Thyme
Instructions
  1. Warm a large skillet over medium heat. Trim all the extra fat off of the chicken thighs, then sprinkle each side with salt and pepper.
  2. Add about 2 tablespoons of Ghee or coconut oil to your skillet, then add the chicken thighs and cook about 3 minutes on each side, until each side is browned.
  3. Remove the chicken thighs from the skillet and set aside.
  4. Add the mushrooms to the skillet - no salt - and caramelize them, about 7-10 minutes, flipping halfway through.
  5. Add the heavy cream, bacon, and thyme to the skillet, whisking well to combine.
  6. Add the chicken thighs back in, and cook on medium-low about 20 minutes, stirring every few minutes, and flipping the chicken thighs about halfway through.
  7. Serve over zucchini noodles, cauliflower, or on it's own immediately!
