Keto Ham Egg Cups

  • 12 Slices Ham
  • 6 Eggs
  • ½ cup chopped Ham (about 4 oz)
  • ¼ cup chopped Green Onions
  • ½ cup Shredded Cheese
  • Salt & Pepper, to taste
  1. Preheat your oven to 400 degrees.
  2. Place one slice of ham in each hole in your muffin tin - using the ham like a cupcake liner.
  3. Mix together the eggs, chopped ham, green onion, cheese, salt, and pepper and beat well to combine.
  4. Pour the egg mixture into the ham-lined muffin tin.  Each cup should be full.
  5. Bake for 15-18 minutes, until eggs are cooked through and the edges of the ham starts to brown.
  6. Store in an airtight container in the fridge for up to 1 week.
