Keto Spinach Salad with Strawberries, Feta, & Pecans

  • 6 oz. Baby Spinach
  • 1 cup Strawberries, sliced
  • ¼ cup chopped Pecans
  • 8 oz. Feta Cheese
  • ¼ cup Red Onion, sliced thin
  • 16 oz Grilled Chicken, in strips
  • 1 recipe Low Carb Balsamic Vinaigrette
  1. First, make the salad dressing: Mix all the ingredients in a salad dressing shaker and shake well. Let sit for 5 minutes or so, then shake vigorously again, making sure the Golden Lakanto is dissolved.
  2. In a large bowl, combine the spinach, strawberries, pecans, feta cheese, red onion, and grilled chicken.
  3. Drizzle the salad dressing over the salad, and toss well to combine.
  4. Serve cold & enjoy!
