Low Carb Sour Cream Cake with Cherries

A tender sour cream cake with light flavor, topped with sweet & tart cherries, my Low Carb Sour Cream Cake is the perfect addition to breakfast, or as dessert after dinner.
  • For The Crust:
  • ½ cup Butter
  • ¼ cup Golden Lakanto Sweetener
  • 2 eggs
  • 1 tsp. Vanilla Extract
  • ½ cup Coconut Flour
  • 1.5 tsp. Baking Powder
  • For The Filling:
  • 1 cup Sour Cream
  • 3 eggs
  • 1 tsp. Vanilla Extract
  • ¼ cup Powdered Lakanto Sweetener
  • 1 cup Pitted Cherries
  1. Preheat your oven to 350.
  2. Grease a springform pan, then place a round piece of parchment paper in the bottom, if desired. Set aside.
  3. To Make The Crust: Cream the butter and ¼ cup Golden Lakanto Sweetener together until fluffy. Beat in eggs, then vanilla.
  4. In a separate bowl, mix together the coconut flour and baking powder. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Spread the batter into the bottom of the pan and set aside.
  6. To Make The Filling: Whip the sour cream, eggs, vanilla, and Powdered sweetener until creamy. Pour over the crust. Drop the cherries evenly on top of the filling.
  7. Bake for 35-40 minutes. The middle will look uncooked, but that's ok. It will set up as it cools. Enjoy!
