No-Bake Keto Peanut Butter Pie

A quick-fix for your peanut butter cravings, No-Bake Keto Peanut Butter pie is easy to whip up, macro-friendly, and requires absolutely no baking!
  • For The Crust:
  • ½ cup Butter, Softened
  • ⅓ cup Almond Butter, no sugar added
  • ½ cup Powdered Lakanto Sweetener {save 20% with my link and code "fitmomjourney"}
  • ½ cup Cocoa Powder
  • ¾ cup Almond Flour {I used this brand}
  • For The Filling;
  • 8 oz. Cream Cheese, softened
  • ⅓ cup no sugar added Peanut Butter
  • ½ cup Lakanto Powdered Sweetener
  • 1½ cups Heavy Whipping Cream
  1. To make the crust: In a mixing bowl, combine the softened butter, almond butter, ½ cup Powdered Lakanto Sweetener, and cocoa powder. Cream together until smooth. Beat in the Almond Flour. The mixture will become very stiff to work work.
  2. Turn the crust mixture into a greased springform pan. Then, grease the flat bottom of a measuring cup and press the crust down evenly into the bottom of the pan. Set in the refrigerator to chill while you prepare the filling.
  3. To make the filling: In a clean mixing bowl, cream the cream cheese, peanut butter, and ½ cup Powdered Lakanto Sweetener until smooth. Add in the 1.5 cups of Heavy Cream and whip until it forms stiff peaks. Scrape the sides of the bowl to make sure there is no straggling peanut butter, then spread the filling into the prepared crust.
  4. Refrigerate 2 hour, or until set. You can top with chocolate chips, Nekstella syrup, or other toppings if desired.
  5. OR, you can freeze this pie for a Frozen Peanut Butter Pie. Just make sure to set the pie on the counter to thaw for 20 minutes before cutting int pieces.
