A Whole30 General Tso's Chicken that will fool you into thinking it isn't healthful! This recipe is also ketogenic, grain-free, low carb, and gluten free.


Keto Whole30 General Tso's Chicken

Okay friends, here is your FIRST recipe for the #FMJJanuaryWhole30 !!!

I'm so excited to share this one with you because it meal preps really well, packs a serious punch of flavor, and is a great way to start off your Whole30.  This recipe is also Ketogenic, Low Carb, Grain Free, Gluten-Free, and more!

Here's what you'll need:

For The Chicken:
2 pounds chicken breasts
2 cups Coconut Flour
2 Eggs
1/2 cup Compliant Almond Milk
For The Sauce:
2 cups Almond Flour
1 tsp. Sesame Oil
1/4 cup Chicken Bone Broth
3 T Coconut Vinegar or Rice Vinegar
3 T Coconut Aminos
1 T Red Curry Paste
1/2 tsp Pure Stevia (Or 3 pureed dates), or more, to taste
1/4 cup chopped Green Onions
1/4 tsp. Guar Gum (optional, for thickening)

Pinch of Ginger

For Serving:

Crushed Red Pepper, for garnish
Steamed Broccoli, for serving
Cauliflower Rice, for serving
 
Directions:
Chop the chicken breasts up into bite-size pieces.  Prepare a baking dish by coating it with cooking oil and heat your oven to 425.
Bread the chicken by first coating it in the coconut flour, then the egg wash (the eggs + almond milk) and follow it up with almond flour. Bread each piece individually, then place in the baking dish.  When coated, bake the chicken at 425 for approximately 10 minutes, until cooked through and the outsides start to brown. (this time may vary based on how big you but your chicken.)
Make the sauce: combine all sauce ingredients except guar gum in a small saucepan over medium-high heat.  Whisk in the guar gum, then keep whisking for 3-5 minutes until the sauces has thickened.  Remove from the heat.
Serve the chicken with the sauce, as well as a pinch of crushed red pepper, broccoli, and cauliflower rice.  Enjoy!
