Easy Grilled Chipotle Chicken Thighs
Who knew you could create delicious marinated chicken out of 4 simple ingredients and just a few minutes?
I this spicy chipotle chicken recipe together to serve a variety of purposes for the whole family: for burritos bowls & burritos, to put in salads, to eat plain as leftovers, or even on a sandwich.
Grilled chicken is perfect for a backyard get-together featuring a grilled main dish, fresh sides, and cool desserts.
And my favorite use – as meal prep to use in whatever way I'm feeling that day.
Quick Chicken Marinade Ingredients
To make the sauce, blend a can of chipotles in adobo – or use a food processor.
In a ziplock bag, or large bowl, mix together lime juice, blended chipotle peppers and adobo sauce, salt, and oil.
Then place the boneless, skinless chicken thighs into the marinade and let that marinade work for at least 30 minutes. Overnight is best, but if you're pressed for time, 30 minutes is just fine.
If you place the chicken thighs in marinade during the weekend, they're a great no-prep recipe for busy weeknights.
This marinade isn't too spicy, in my opinion, but if especially if you are feeding it to children or anyone sensitive to spicy flavor, feel free to use less of the blended sauce.
How To Use Keto Grilled Chipotle Chicken Thighs
This chipotle chicken recipe is very versatile and I had trouble narrowing down all my ideas for them into a (non-overwhelming) list for you:
- Burritos
- In a sandwich
- On a taco salad
- Burrito Bowls – with cauliflower rice, sour cream, red onion, guacamole, black beans, jalapeno peppers, (brown rice fi you do carbs) etc
- On their own, with a side of ranch or sour cream for dipping
- In a smoky chicken salad

Chicken Thighs (we prefer skinless and boneless chicken thighs, but if you prefer skin-on, go for it!)
How To Make Chipotle Chicken Thighs
Start by blending the can of chipotles in adobo sauce.
Then to a large bag or bowl, add the blended sauce, lime juice, salt, and oil. Feel free to use less of the chipotle sauce if serving to someone who is sensitive to spice.
Let sit in the marinade at least 30 minutes – overnight is best.
When the chicken thighs have marinated sufficiently, heat up the grill to a medium-high heat, and grill the chicken thighs until each side has a nice char and the internal temperature has reached 165 F with an instant read thermometer. (If using skin-on thighs, start with skin side down) The char brings out the best flavor!
Let rest, then serve and enjoy!

Sure can, but be aware they won't have that nice char that grilling would give them. Instead, cook at 400F for 12 minutes, then flip and cook for 7-12 more minutes, until an instant-read thermometer reads 165 F.

Let the thighs come to room temperature, then store in an airtight container in the refrigerator for up to 4 days.
