We love pickles all year round.
They're a great low carb snack, and satisfy that crunchy, salty need.
And they're great with keto BBQ – and all the sides – too.
These homemade pickles are a great option because they use a sugar substitute – no corn syrup, white sugar or blood sugar spike like store-bought pickles – to help with weight loss on the keto diet.

Supplies To Make Homemade Refrigerator Pickles
As always, having certain supplies on hand in the kitchen will make this recipe simpler, although many substitutions can be made for the exact items I used.

A Mason Jar – I like the quart wide-mouth kind, with an attached sealing lid. They're aesthetically beautiful and long-lasting.
Other options include regular wide-mouth jars in pint or quart size. Use what you have on hand if you don't want to purchase as special jar!

A Crinkle Cutter – if you want crimped pickle chips, rather than straight cut.
A Whisk – for stirring the brine.

Garlic Cloves – either fresh or diced & jarred in water (NOT oil)

How To Make Easy Refrigerator Dill Pickles
First, slice the unpeeled cucumber into spears or slices. You can use either the vegetable crimper or a sharp knife.
Then, make the brine.
Add the water, vinegar, salt, garlic, and dill to a medium bowl. Stir with a whisk until salt is dissolved.
Slice the unpeeled cucumbers, then pack into 2 quart mason jars. Pour the brine over the cucumbers. Seal and refrigerate for at least 24 hours. Enjoy your quick pickles the next day!

In my opinion, english cucumbers are the best cucumbers to use. They have very few seeds, are delightfully crunchy, slice easily, and stay crunchy for week in the brine.
Can I use Apple Cider Vinegar?
If you want fast recipe pickles that taste like Grillo's, then no. Apple Cider Vinegar will produce a pickle, but it will be very different than what is made here.
Are These Bread & Butter Pickles?
No, these are a true, garlicy dill pickles – the best pickles, in my opinion! These are not sweet pickles, either.
How Many Carbs Per Serving?

Ingredients
- 1 cup White Vinegar
- 1 cup Water
- 5 cloves Garlic, sliced thin
- 3 tsp. Sea Salt
- 1/2 tsp. Allulose
- 1 tsp. Whole Peppercons
- 1 tsp. Mustard Seeds
- 3 English Cucumbers
- 1/2 oz Fresh Dill
Instructions
