Keto Lemon Curd
I told my daughter the other day while eating lunch “We are sauce people.”
She looked at me like I was clueless, but then I explained….
We rarely eat meat, veggies or bread without some kind of a sauce or condiment.
Ranch, Chick Fil a sauce, Salsa, Gravy, you name it!
We are sauce people, and the doors of our refrigerator echo that sentiment.
She still thinks I'm crazy, but I stand by my statement: We are sauce people.
Why?
Because everything is better with sauce.
Is Keto Lemon Curd a sauce?
I would argue YES.

Ingredients for Keto Lemon Curd
Egg Yolks
Eggs
Sweetener of Choice (I used Lakanto Monkfruit Baking Sweetener. It is the BEST. Save 15% with code FITMOMJOURNEY)
Butter (unsalted is best, but if all you have is salted, it's ok!)
Lemon Juice

How To Make Keto Lemon Curd
Whisk your egg yolks, eggs, and sweetener in a medium saucepan OFF of the heat. Mix until very well combined, then move the pan to medium low heat.
Add in the butter and lemon juice, stirring constantly over the heat until mixture begins to thicken and coats the back of a spoon.
Once thickened, remove from the heat and allow to cool, then jar and store in the refrigerator for 2 hours.

- 3 Egg Yolks
- 3 Eggs
- 2/3 cup Sweetener of Choice (I used Lakanto Monkfruit Baking Sweetener. It is the BEST. Save 15% with code FITMOMJOURNEY)
- 1/2 cup Butter (unsalted is best, but if all you have is salted, it's ok!)
- 1/3 cup Lemon Juice
Instructions
