Old Fashioned Salisbury Steak Recipe
Believe it or not, the humble hamburger steak has roots in 19th-century medicine. American physician Dr James Salisbury championed ground meat as a health food, and the rest — as they say — is culinary history. What started as a prescription turned into one of the most beloved old fashioned Salisbury steak recipes in American home cooking.
This homemade Salisbury steak recipe keeps things real — simple ingredients, big flavor, and a rich mushroom gravy that tastes like it simmered all day (spoiler: it didn't). Here's what you'll need to make this simple Salisbury steak — and why each ingredient earns its place in the bowl.
Ground Beef: Use 80/20 ground beef for the best results. The fat content keeps your ground beef patties juicy and flavorful — lean ground meat tends to dry out and won't give you that satisfying, hearty bite.
Bread Crumbs: These act as a binder in the Salisbury steak mixture, helping the patties hold their shape during cooking. They also add a subtle texture that makes every bite feel substantial.
Eggs: Another binder that holds the salisbury steak patties together. Without eggs, your patties are likely to fall apart in the skillet — not exactly the dinner table moment we're going for.
Onion Soup Mix: This little packet is doing heavy lifting. It seasons both the meat and the gravy with layers of savory, onion-forward flavor — no chopping required. It's the secret weapon of this easy salisbury steak recipe.
Dijon Mustard: Don't skip the dijon mustard! It adds a subtle tang and depth to the salisbury steak mixture that you can't quite put your finger on — but you'd definitely notice if it was missing.
Worcestershire Sauce: Used in both the patties and the gravy, worcestershire sauce brings that deep, umami punch that makes this dish taste complex. It's one of those ingredients that just makes everything taste more like itself.
Salt & Pepper: Season to taste — and don't be shy. Proper seasoning is what separates a good hamburger steak from a great one.
Butter: The base of the rich brown gravy starts with butter. It creates that silky, glossy finish that coats every patty beautifully.
Flour: Combined with butter to make a roux, flour thickens the gravy to that perfect, spoonable consistency that clings to the meat.
Beef Broth: Use a good quality beef broth or beef stock for maximum flavor. It forms the foundation of the gravy and gives it that savory, slow-simmered taste without the wait time.

How To Make Homemade Salisbury Steak
Making this simple Salisbury steak is easier than it looks — and it all happens in one large skillet.
Start by combining your ground beef, bread crumbs, eggs, onion soup mix, dijon mustard, worcestershire sauce, salt, and pepper in a large bowl.
Mix until just combined, then form the salisbury steak mixture into eight evenly-sized hamburger patties.
Brown your meat patties over medium-high heat in batches, then set them aside while you build the gravy.
Melt butter in the same skillet, whisk in flour, then pour in your beef broth — scraping up all those delicious browned bits from the bottom.
Return the patties to the skillet, turn down to low heat, cover, and let everything come together for about 10 minutes until they reach the proper internal temperature.

Equipment Needed To Make Homemade Salisbury Steak
As always, having certain supplies on hand in the kitchen will make this recipe simpler, although many substitutions can be made for the exact items I used.
My kitchen essentials can always be found in my Amazon Storefront.
Large Skillet: This is your MVP for the whole recipe. You'll use it to sear the hamburger patties, build the gravy, and finish everything together — fewer dishes, more flavor.
Large Bowl: You'll mix your salisbury steak mixture in here. Make sure it's big enough to get your hands in — this one's a hands-on situation.
Spatula or Tongs: Essential for flipping your patties without breaking them apart. A wide spatula gives you the most control when working with those beautiful ground beef patties.
Whisk: You'll need this to stir together the butter and flour, and then to incorporate the beef broth smoothly into the gravy. No lumps allowed.
Measuring Cups and Spoons: Precision matters for the gravy — too much flour and it's gluey, too little and it won't thicken. Measure everything out before you start cooking.
Lid for the Skillet: You'll need this for the final cook-through stage. Trapping the steam is what keeps the patties tender and ensures they cook evenly on low heat.
Storage Instructions
Refrigerator: Store leftover Salisbury steak (patties and gravy together) in an airtight container in the refrigerator for up to 3-4 days. The gravy actually gets richer as it sits, so day-two leftovers are no consolation prize.
Freezer: To freeze, let the Salisbury steak cool completely, then transfer to an airtight container or wrap tightly in plastic wrap followed by a layer of aluminum foil. It will keep in the freezer for up to 3 months — thaw overnight in the refrigerator before reheating on the stovetop over low heat.
Homemade Salisbury Steak - Easy Weeknight Meal
The best comfort food doesn't come from a can — and this homemade Salisbury steak simple recipe is proof. Rich brown gravy, juicy ground beef patties, and a dinner table that goes completely silent? That's the power of a classic dish done right.
Ingredients
- Ingredients for the Salisbury Steak
- 2 lbs Ground Beef
- ½ cup Bread Crumbs
- 2 Eggs
- 1 packet Onion Soup Mix
- 1 Tablespoon Dijon Mustard
- 1 Tablespoon Worcestershire Sauce
- Sale & Pepper to taste
- Olive OIl or avocado oil, for the skillet
- Ingredients for the Gravy:
- ¼ cup Butter
- ¼ cup Flour
- 2 cups Beef Broth
- 1 packet Onion Soup Mix
- Optional: Garlic Powder and a splash of soy sauce
Instructions
- Heat a large skillet over medium heat. Add 1 Tablespoon of olive oil or avocado oil to it to prevent sticking.
- Make the salisbury steak: In a large bowl, combine ground beef, bread crumbs, eggs, onion soup mix, dijon mustard, worcestershire sauce, salt, and pepper
- Form ground beef mixture into approximately 8 evenly sized patties, then brown in the preheated skillet in batches until browned on both sides. Remove from the heat.
- Make the gravy: In the skillet, melt the butter, then add the flour, stirring to combine. Heat for 1-2 minutes, just enough to brown the butter and flour a bit.
- Add 2 cups of beef broth and worcestershire sauce and let it bubble. Scrape the bits of cooked food from the bottom of the skillet as they loosen.
- Bring it all together: return the salisbury steak patties back to the skillet and submerge in the gravy mix. Turn heat down to low, add lid, and let cook until patties are cooked through, about 10 minutes.
- Serve while warm. Our favorite is with homemade mashed potatoes and green beans.
