Keto Peanut Butter Brownies

Buckeyes are a candy made from peanut butter fudge dipped in melted chocolate – so delicious! These Keto Peanut Butter Brownies are inspired by the classic buckeye treat, using a base of chocolate brownies, topped with peanut butter fudge, followed by a layer of melted chocolate.

I've put together a few keto brownie recipes over the years, and companies like Lakanto have come up with foolproof brownie mixes that taste great and really reduce the amount of work needed to turn out a great product.
I already have a recipe for Keto Buckeyes – and they're amazing!
But add a layer of brownies to the bottom?
They're a truly irresistible treat!
Keto Buckeye Brownies
For this recipe you can either use my Keto Almond Butter Brownie recipe found HERE (and in the recipe card)
Or, you can purchase Lakanto Brownie Mix and make them according to the package instructions for the brownie base.
For the peanut fudge layer, all you have to do is mix no-sugar added peanut butter and Lakanto Powdered Sweetener until the peanut butter has formed a melty fudge consistency and spread over the cooled brownies.
And for the top chocolate layer, simply melt butter and Lily's chocolate chips and spread over the cooled peanut butter fudge layer.
Cool, slice, and serve!
Storing Keto Peanut Butter Brownies
The Keto Peanut Butter Brownies should set up in under 1 hour in the refrigerator once assembled.
These store well in the refrigerator for 2 weeks, or slice and freeze separately to keep in the freezer for up to 1 month.

Ingredients
- For The Brownies
- 1 cup Lakanto Granluated Sweetener
- 3/4 cup Cocoa Powder
- 3/4 cup Almond Flour
- 1/4 cup Lupin Flour
- 1/2 cup Psyllium Husk
- 1/2 tsp. Baking Soda
- 1/4 tsp. Sea Salt
- 1/4 tsp. Pure Stevia Extract
- 8 T Melted Butter
- 2 Eggs
- 1 tsp. Vanilla Extract
- 1 cup Lily's Chocolate Chips

- For the Peanut Butter Fudge Layer
- 1 cup Creamy Peanut Butter (no sugar)
- 1 cup Powdered Lakanto Sweetener
- For the Chocolate Top Layer
- 1/2 cup Lily's Milk Chocolate Chips
Instructions
- Preheat oven to 350.
- Grease a 9x9 baking dish, or line with parchment paper. Set aside.
- In a large mixing bowl, cream together softened butter and Lakanto Sweetener. Mix in the eggs, stevia, and vanilla extract.
- Dump the cocoa powder, almond flour, lupin flour, psyllium husk, baking soda, and sea salt on top, then mix together until JUST combined.
- Fold in the chocolate chips, then bake at 350 for 12 minutes - do NOT bake any longer than 12 minutes.
- Cool at least 1 hour before spreading the peanut butter fudge layer on top.
- To make the peanut butter fudge: mix together the peanut butter and lakanto powdered sweetener until it is the consistency of play dough. Spread over the top of the brownies and let sit until cool.
- To make the chocolate topping: melt the chocolate chips and butter together, stirring until smooth. Spread gently over the top of the brownies and cool until set.
