Keto Puppy Chow – Keto Muddy Buddies

An easy, healthy, Keto Puppy Chow Recipe {Keto Muddy Buddies} that uses ingredients you probably already have in your Keto kitchen! With crunchy cereal bits coated in peanut butter, chocolate, and then powdered sweetener, this will satisfy any sweet craving you have!
I'm just going to say it: this recipe will change your life.
It's one of those recipes that will make you think “yep, I can stick with keto long-term.”
You've probably figured out by now that this is a copycat recipe of those Chex Muddy Buddies that you see in the grocery story, or the homemade version your mom probably made growing up. We called the homemade stuff Puppy Chow -it was only after I started high school that Chex came out with their bagged grocery store muddy buddies.
It seems so simple to make puppy chow the regular way, but since cereal, powdered sugar, and regular chocolate chips are no-gos on the keto diet, the recipe becomes a bit more challenging.
However, there are some amazing inspirational people on Instagram who inspire me with their recipes. One of those came up with a recipe for Coconut Puffs, which I made according to the original recipe, but immediately thought they would work well for Puppy Chow.
I did modify the recipe a bit to make it crunchier and more cereal-like and then cut them smaller to be the correct size, but the original recipe for Coconut Puffs was genius all on it's own.
Here's what you'll need:
For The Coconut Puffs:
2 cups Shredded Mozzarella Cheese
3 T Coconut Flour
2 T Powdered Lakanto Sweetener
For The Coatings:
1/2 cup Lily's Chocolate Chips
1/2 cup Peanut Butter (or almond butter)
1 cup Lakanto Powdered Sweetener
Directions:
To Make The Coconut Puffs:
Preheat oven to 350 degrees. Melt cheese in the microwave in 30 second increments until fully melted. Add in the coconut flour and powdered sweetener until well combined.
Roll out onto parchment paper until it it 1/16″ thick. Cut into 1/2″ wide squares with a pizza cutter. Separate on the parchment paper, and then slide the paper onto a baking sheet.
Bake at 350 for 10 minutes or until golden brown. Let cool completely before moving on to the next step.
To Assemble The Puppy Chow:
Melt the chocolate chips with the peanut butter in a microwave safe bowl on 30 second increments, stirring in between.
Add the coconut puff “cereal” and and stir until all the pieces are coated with the chocolate mixture.
Place 1/2 cup of the powdered sweetener in the bottom of a 1 gallon ziploc bag. Pour the chocolate coated coconut puff into the bag and top with the remaining 1/2 cup of powdered sweetener. Zip the bag of tightly and shake to coat. Enjoy!
