Keto Blueberry Mug Cake
{Ketogenic, Low Carb, THM:S, Sugar Free, Grain Free, Gluten Free}
A creamy, delicious treat, this Keto Blueberry Mug cake is so easy to whip up and will satisfy any sweet craving you have!
Do you ever just NEED something sweet?
One of the amazing benefits of the Ketogenic Diet is that most people notice reduced craving for carbohydrates, sugar, and salt. It's just ONE of the amazing benefits of the Ketogenic Diet {you can read more about the others HERE}.
But since you're here, you probably are already enjoying some of the cool things about Keto, so let's get on with this recipe!
First, I used both frozen blueberries and OOO Flavors Blueberry Keto Flavor.
Blueberries are wonderful – they are delicious and pack a punch of nutrients – but put them in a mug cake and the flavor doesn't spread to the entire cake. Like at all.
Enter Keto Flavors from OOO Flavors.
I discovered these awesome flavors (they have more than 400!!!) in The Keto Box in November (I think), and I've been hooked ever since!

Now, onto the actual Keto Blueberry Mug Cake.
Here's what you'll need:
1 T Butter, melted
1 T Sour Cream or Greek Yogurt
1/2 oz Cream Cheese, softened
1 Egg Yolk
1/2 tsp. OOO Flavors Blueberry Extract
1.5 T Almond Flour
1 T Lupin Flour
1/4 tsp. Baking Powder
1 T Lakanto Granulated Sweetener*
1/4 cup Frozen Blueberries
For Whipped Cream Topping:
1 T Heavy Cream
1/8 tsp. Cream of Tartar
2 tsp. Powdered Lakanto Sweetener, optional*

Directions:
In the mug, mix the butter, sour cream (or greek yogurt) cream cheese, egg yolk, and blueberry extract.
Add in the almond flour, lupin flour, baking powder, granulated sweetener, and frozen blueberries. Mix well to combine.
Microwave for 90 seconds.
Make the whipped cream topping by whipping the heavy cream, cream of tartar, and powdered sweetener until the cream has doubled in size.
Top the mug cake with the whipped cream & enjoy!

Instructions
