Mini Keto Valentine Cupcakes

Sweet little Mini Keto Valentine Cupcakes with vanilla mascarpone frosting are the perfect treat for kids or adults. They can be made as mini cupcakes or full size!
Need a dessert that will please adults and kids this Valentine's Day? My Mini Keto Valentine Cupcakes are just the thing!
Made with my fail-proof Keto Yellow Cake (I tinted mine pink, but you can leave it as it), topped them with a whipped mascarpone frosting, and then topped them with 1 chocolate pearl each and a watermelon fondant heart.
You certainly don't need to go to the trouble of making the fondant hearts – honestly keto fondant is HARD to make, but it photographed beautifully.
But the pink chocolate pearls I found at Walmart, and since they are 1 carbohydrate each I felt they were worth adding to the top of each cupcake so I didn't have to make my own!
You could also make pink or red Keto Sprinkles with my super easy recipe but you will need to prep them a day ahead.
Now, onto the recipe for my Keto Valentine Cupcakes….
Here's what you'll need:
1 recipe of The Best Keto Yellow Cake
1 cup Heavy Cream
8 oz Mascarpone Cheese
1/4 cup Lakanto Powdered Sweetener*
1 bag Chocolate Pearls

Directions:
Line 2 sheets of small cupcakes with liners, and set aside. Preheat oven to 350.
Prepare the Keto Yellow Cake according to the directions, and fill the muffin tins 2/3 full of the batter. Bake for approximately 20 minutes, until the cupcakes are set in the middle.
To make the icing: in a large mixing bowl, whip the mascarpone and the powdered sweetener until combined and soft. Add in the heavy cream and whip again until it forms stiff peaks (do not overmix, as the icing will break)
Place the icing in a piping bag, top the cooled cupcakes, and finish them off with a chocolate pearl.
