Roasted Broccoli with Feta

Broccoli does a body good whether it's raw or steamed, but these day my favorite way to eat it is roasted with some good sea salt and feta cheese.  Roasted Broccoli with Feta Cheese, is an easy, crowd-pleasing side dish.


Roasted Broccoli with Feta Cheese
{Ketogenic, Low Carb, THM:S, Sugar Free, Grain Free}

Broccoli does a body good whether it's raw or steamed, but these day my favorite way to eat it is roasted with some good sea salt and feta cheese.  Roasted Broccoli with Feta Cheese, is an easy, crowd-pleasing side dish.

Most days, my favorite way to eat is to throw a bunch of ingredients in a bowl, drizzle it with a sauce and salt salt, and call it good.  Usually I start with a very healthy portion of veggies, top it with a protein, and then add a sauce that pulls it all together.

That's just where my life is right now, and eating my food in bowls is just easy.

But occasionally, I make a real, sit-down meal that requires both an entree and sides – like this Easter – and what I love about preparing Roasted Broccoli with Feta Cheese is that it packs a serious punch of nutrients and fiber, as well as healthy fats from olive oil.  The feta cheese makes it anything but bland, and roasting the broccoli make it fork tender with crispy ends – so delicious!

It's good, simple food for the soul.

Here's what you'll need….

24 oz pre-cut Broccoli Florets
4 T Olive Oil
1/2 tsp. Crushed Red Pepper Flakes
2 heads Garlic, crushed
1/2 tsp. Celtic Sea Salt
3/4 cup Feta Cheese, crumbled

Directions:
Preheat oven to 450 degrees.  Line a baking sheet with parchment paper or olive oil.  
Place the broccoli florets in a single layer on the prepared pan.  Drizzle with olive oil, salt, red pepper flakes, and garlic.  Toss to combine, then spread out in a single layer.
Roast for 10-15 minutes, until crisp and tender.
Remove from the oven, toss in a bowl with the feta, and enjoy!

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 24 oz pre-cut Broccoli Florets
  • 4 T Olive Oil
  • 1/2 tsp. Crushed Red Pepper Flakes
  • 2 heads Garlic, crushed
  • 1/2 tsp. Celtic Sea Salt
  • 3/4 cup Feta Cheese, crumbled
