Smoked Chicken Thighs
{Low Carb, Ketogenic, THM:S, Grain Free, Paleo}
Chicken Thighs coated in a homeade BBQ rub then cooked in a smoker until tender and flavorful. Serve with your favorite barbecue sauce and sides for the perfect food to feed a crowd or outdoor gathering!
Smoked Chicken Thighs
I've never been a fan of chicken thighs, or any type of fatty meat, really.
Which I suppose is not normal – most people really enjoy the richness of fatty cuts of meat – but I just have never liked them.
So I've steered clear of chicken thighs, even when they're boneless and skinless, and even though they're significantly cheaper than chicken breasts.
However, since we bought our smoker, I've been experimenting with smoked chicken thighs!
Their fat lends them to stay moist while cooking, and the final product (when done right) isn't actually all that fatty!
Ingredients for Smoked Chicken Thighs
The flavor of this recipes comes from 2 things: the smoke, and the rub.
For the smoke, you'll need a smoker. We have an Oklahoma Joe smoker, whereas other people like RecTec grills, Traeger's or the Big Green Egg. There are tons of brands out there, but we've been very happy with out Oklahoma Joe's performance, features, and the lower price point.

As far as the rub goes, you can either make your own, or purchase a pre-made rub.
However, a word of caution if buying a rub: watch out for added ingredients that aren't clean, are sugar, or are just filler.

Or, if you would like to make your own, here is what you'll need:
1/4 cup Lakanto Golden Sweetener
1 T Paprika
1/2 tsp. Pepper
1 tsp. Sea Salt
1 T Garlic Powder
1 T Onion Powder
1/2 tsp. Mustard Powder
1/4 tsp. Cayenne Pepper

Smoked Chicken Thighs

Ingredients
- 2 lbs. Chicken Thighs (boneless and skinless, or with skin and bone: your choice)
- For The Rub:
- 1/4 cup Golden Sweetener
- 1 T Paprika
- 1/2 tsp. Pepper
- 1 tsp. Sea Salt
- 1 T Garlic Powder
- 1 T Onion Powder
- 1/2 tsp. Mustard Powder
- 1/4 tsp. Cayenne Pepper
- For Serving:
- 1 cup Stevia Sweetened BBQ Sauce
Instructions
Preheat your smoker to 250 degrees F. Applewood chips or pellets are preferred for smoking chicken. If you don't have those, use whatever you have on hand.
Combine all rub ingredients, then coat the chicken thighs on top and bottom. Be sure to get underneath the skin.
Place the chicken in the smoker and cook for 2.5 - 3 hours, until an instant read thermometer inserted in the middle reads 165 degrees F.
Optional: if your smoker is also a grill, turn it up to 350, then lightly grill each thigh for 3 minutes each side.
Brush with BBQ sauce and cook for 10 more minutes, then serve.
