Keto Macaroni Salad
We've moved into our new house, and in doing so, some decisions were made.
Namely, we couldn't find a couch we liked, so we spent the money we had allotted for a couch on a very nice Oklahoma Joe Pellet Grill & Smoker.
And we LOVE it.
No regrets at all switching out a couch for a grill – my husband hasn't cooked (at all) in almost 2 years and this week alone he has cooked us 4 dinners + leftovers!
I enjoy cooking, but the break has been amazing.
However, even with this newfound dinnertime freedom, I'm still trying to find summertime sides that are quick to whip up and keep in the refrigerator.
Pasta Salads are a favorite, and especially since I struggle to get in adequate fats in a day (what kind of a keto person am I?) and most pasta salads have quite a bit of mayo.
Low Carb Pasta for Keto Macaroni Salad
Until the last few months, there have been almost no low carb pasta options available.
The ones that were on the market weren't good enough to bother recommending to you – or eating myself, because I don't recommend anything I don't eat myself.
But towards the end of 2019 and the beginning of 2020 I've been trying some really fantastic low carb pastas.
My Favorite: Great Low Carb Pastas
Great Low Carb makes a huge assortment of low carb (and sometimes paleo) pastas, breads, and baked goods.
They all taste fantastic, and have great macros, but I do have to caution you that many contain wheat. If you're sensitive to gluten, these will not be for you.
But as far as taste and consistency, these pastas take the cake!
For my Keto Macaroni Salad, I used Great Low Carb Elbow noodles.

Second Favorite: Almond Love With
Made primarily from Almond Flour and classified as Paleo, Almond Love with Ziti is a high protein, low carb pasta.
The macros and ingredients fit perfectly with my goals, although cooking the pasta can be a bit tricky. Once you get the hang of it, this pasta tastes pretty good!

Ingredients for Keto Macaroni Salad
Keto Macaroni Noodles, cooked
Broccoli Florets, cut into small pieces
Red Pepper, cut into small pieces
Avocado Oil Mayo {this brand is my favorite, or homemade}
Sour Cream
Dijon Mustard
Hard Boiled Eggs, chopped {optional}

Keto Macaroni Salad

Ingredients
- 2 cups Keto Macaroni Noodles, cooked
- 1 cup Broccoli Florets, cut into small pieces
- 1 Red Pepper, cut into small pieces
- 1/2 cup Avocado Oil Mayo {this brand is my favorite, or homemade}
- 1/2 cup Sour Cream
- 2 T. Dijon Mustard
- 2 hard boiled eggs, chopped {optional}
Instructions
- Cook the macaroni according to the package directions. Drain and set aside to cool.
- In a large bowl, mix together the chopped broccoli, chopped red pepper, sour cream and mustard.
- Mix in cooled pasta and hard boiled eggs until just combined.
- Add salt and pepper to taste. Chill until serving time.
