The Best Keto Chicken Tenders
If you haven't been using Pork Rinds as breading, today is when you start!
Yep, Pork Rinds.
Basically, when you take pork rinds and grind them up into the consistency of almond flour, you get a great, crispy “breading” product that is amazing for recipes like Keto Chicken Tenders, Keto Fried Chicken and even Keto Chicken Parmesan.
It's incredibly easy to make pork dust.
It's even easier to use.
And you'll thank me after you make these!
I chose to bake these chicken tenders because, quite frankly, it's easier and less messy than frying them.
The baking method also leaves them incredibly juicy and flavorful – a family favorite!
Finally, I created a Keto Copycat Chick-Fil-A Sauce for these tenders, because, well, it's awesome!

Ingredients for Keto Chicken Tenders
Boneless, skinless chicken breasts (or tenders)
Salt & Pepper
Coconut Flour
Eggs
Almond or Macadamia Milk
Pork Dust (instruction below)
First up, let's make the Pork Dust:
Pork dust is simply ground up pork rinds. It makes a wonderfully crunchy breading!
Fill your entire blender or food processor with plain pork rinds. Turn the blender or food processor on to the lowest setting until the pork rinds have been ground into the texture of almond flour.
Depending upon the size of your blender or food processor, you may need to do 2 batches of pork rinds to get enough pork dust.
Directions:
Preheat oven to 350.
If using chicken breasts, halve the breasts both thickness-wise, and length-wise, turning them into chicken tender size pieces. If using chicken tenders, no cutting is needed. Trim any fat or gristle as needed.
Lay the chicken pieces out in a single layer on a cutting board or baking sheet. Sprinkle salt and pepper over the chicken pieces.
Put the coconut flour in one bowl, whisk the eggs and nut milk in a second bowl, and place the pork dust in a 3rd bowl.
Use one hand to dip a chicken piece in the coconut flour, then drop in the egg mixture with that same hand. You will continue using this hand as your “dry hand.” Using your clean hand as your “wet hand,” dredge the chicken in the egg wash, then move it to the pork dust bowl.
Switch back to your dry hand, and coat the chicken in pork rinds.
Place on a greased baking sheet and repeat with the remaining chicken pieces.
Sprinkle the breaded chicken tenders with additional salt and pepper, then bake at 350 for 25 minutes.
Take out of the oven, let rest for 5 minutes, then serve!
