An easy to make Keto Blueberry Muffin Recipe that are ready to eat in under 20 minutes! One bowl is all it takes to whip up these tasty muffins.
This recipe didn't start out as blueberry muffins.
Instead, it was a happy accident that happened when I was working on Keto Bread using Lupin Flour. It was too delicate for the robust loaf of bread I was hoping for, but I thought it might be nice as muffins.
Fast forward to 2 test batches later and I've got a wonderfully fluffy, springy, blueberry muffin that is perfect as a quick breakfast, a snack, or a treat after dinner with butter.
Here's what you'll need…..
Lupin Flour
Oat Fiber
Psyllium Husk
Ground Flax
Baking Powder
Celtic Sea Salt
Eggs
Melted Butter
Greek Yogurt or Sour Cream
Vanilla Extract
Lakanto Classic Monkfruit
Blueberries, fresh or frozen

Keto Blueberry Muffins
An easy to make Keto Blueberry Muffin Recipe that are ready to eat in under 20 minutes! One bowl is all it takes to whip up these tasty muffins.
Ingredients
- 1/2 cup Lupin Flour
- 1/4 cup Oat Fiber
- 2 T Psyllium Husk
- 2 T Ground Flax
- 3 tsp. Baking Powder
- 1/4 tsp. Celtic Sea Salt
- 4 Eggs
- 1/2 cup Melted Butter
- 1/2 cup Greek Yogurt or Sour Cream
- 1 tsp. Vanilla Extract
- 1/4 cup Lakanto Classic Monkfruit
- 1/2 cup Blueberries, fresh or frozen
Instructions
- Preheat oven to 350. Prepare a muffin tin with coconut oil cooking spray or muffin liners.
- Beat the eggs with the greek yogurt or sour cream until the eggs lighten in color. Add in the butter, vanilla, and monkfruit. Stir to combine.
- Beat in all of the dry ingredients except for the blueberries. Add the blueberries last, stirring gently to keep the batter from turning blue.
- Fill each muffin hole in the tin 2/3 the way full of muffin batter, then bake for 20 minutes, until the edges just start to turn brown.

Not silly at all! Yes, they are 2 net carbs per muffin. And lupin flour is pretty new, but you can buy it on amazon. It is linked in the recipe
