Keto Chicken Tortilla Soup

The longer it simmers, the better this Keto Chicken Tortilla Soup tastes! Made to be packed with flavor as well as Paleo, Ketogenic, Low Carb, a THM:S and Grain Free, Keto Chicken Tortilla Soup is a soothing soup for cold weather.
One of the things I used to miss out on since transitioning to a low carb, paleo lifestyle are all the amazing soups.
You know, those soups that warm your soul when it's too cold out to even think about spending time outside, that are are more delicious the day after when all the flavors have mellowed, and that are packed with health promoting ingredients rather than chemicals and additives.
So slowly and surely, I've been building an index of Keto Soup Recipes, most of which are already Paleo/Whole30 compliant, which you can access HERE.
Those recipes that aren't automatically dairy free have substitutions listed to make them compliant with your dietary needs.
So this past week, I finally decided to tackle a soup that's been on my list for a while: Keto Chicken Tortilla Soup.
And guys, this soup DELIVERS.
Completely customizable with the veggies and a creamy element that fit your way of eating, this soup rivals the best Mexican restaurants.
Dietary notes for Keto Chicken Tortilla Soup
For Keto: Feel free to add in cheese if you desire. For extra creaminess, stir cream cheese into the hot soup. Sliced avocado is always a good idea on top, as is sour cream if you do dairy.
For Paleo/Whole30: pureed cauliflower will make this soup creamy. Add sliced avocado to the top for added fat and coolness. Brown Siete Foods Tortillas for tortilla strips to top the soup.
Ingredients for Keto Chicken Tortilla Soup
2 lbs. Boneless, Skinless Chicken Breasts {I used ButcherBox}
2 tsp. Salt
2 10-ounce cans Tomatoes with Chiles
14.5 ounces Paleo Chicken Bone Broth {I used Kettle & Fire}
1 onion, Chopped
1 Tbsp. chopped Garlic
1 Tbsp. Onion Powder
1/2 tsp. Chili Powder
1/4 tsp. Cayenne
1 tsp. Cumin
1 Tbsp. Smoked Paprika
1 head Cauliflower, chopped and steamed
Directions for Keto Chicken Tortilla Soup
Combine all ingredients except chicken broth and steamed caulliflower in a slow cooker.
In a blender, blend the chicken broth and cauliflower until smooth, then add to the slow cooker.
Cook on low for 6 hours.
Top with cheese, sour cream, avocado, and crispy paleo tortilla strips, if desired.
