Strawberries have always had a special place in my heart. As a child, I watched Strawberry Shortcake on TV and played with the doll. I would pick them by the gallon from our garden, then eat as many as I could while they were fresh, freezing the rest to eat during the winter.
I’m always looking for flavorful ways to cook inexpensive cuts of meat in THM-friendly ways, and these Slow Cooker Pork Carnitas fit the bill perfectly. So tender and full of flavor, with tons of citrus and an almost-smoked texture, they are great for feeding large crowds, or for having leftovers of later in the week.
When I’m not gobbling down Vanilla Ice Cream, I usually turn my attention to something even better: Trim Healthy Mama Chocolate Ice Cream. Sometimes the best desserts are the simplest: A chocolate chip cookie. A piece of cake. Or in this case, Basic Trim Healthy Mama Vanilla Ice Cream.
Not too long ago, I was at a friends house and we had a really unexpected treat (well, for winter anyway): Strawberry shortcake! It reminded me of summer and was incredibly good, but that’s probably because strawberry shortcake is one of those “perfect” desserts. Not too sweet, not too savory. Light, but still filling. Great balance of flavors. It’s a classic for a reason.
Let’s see a show of hands: whose family isn’t totally on the Trim & Healthy Train yet? Admittedly, it’s easier to get used to separating your carbs and fats while eating regular food, than it is to get used to stevia and funky low-carb flours in desserts. Even so, sometimes the family like to rebel.
Feta Cheese, Spinach, and Sun-Dried Tomatoes are a timeless combination. And to be honest, I could eat them in everything from omelets and salads, to putting them in casseroles and burgers. Or in this case, an awesome THM:S Chicken Burger!
