Chewy Keto Oatmeal Cookies

These Chewy Keto Oatmeal Cookies are not only just like the real thing, they're absolutely amazing.
These cookies contain no actual oatmeal, but instead use a bit of coconut and low-carb ingredient trickery to get the same taste and texture. To be honest, I didn't think was possible until stumbling upon m new favorite ingredient a few months ago: Lupin Flour.
Lupin flour is what gives these cookies their chewy, yet cakey texture. I'll be writing an article about how to bake with Lupin Flour here soon, but for now, you should definitely consider putting some in your low-carb Pantry
I've thrown away countless batches of dough that just didn't work, but finally landed on this combination that you're absolutely going to LOVE.
Here's what you'll need:
1/4 cup + 2 T. Lakanto Granular Sweetener
3/4 cup Almond Flour
2 T Lupin Flour
1/4 cup Unsweetened Shredded Coconut
2 tsp. Beef Gelatin
1 tsp. Baking Powder
Pinch of Sea Salt
1 Egg
5 T Butter, softened
1 oz Cream Cheese
Directions:
Preheat oven to 350. Place parchment paper on a baking sheet and set aside.
In a mixing bowl, cream together Cream Cheese, Butter, Egg, and Lakanto Granular Sweetener.
In a separate bowl, whisk together Almond Flour, Lupin Flour, Coconut, Beef Gelatin, Baking Powder, and Sea Salt. Add the dry ingredients to the wet and mix until just combined.
Use a cookie scoop to make 10-12 cookies, spaced 2 inches apart on the cookie sheet.
Bake for 12-15 minutes, until the edges just start to brown.

Lupine flour can cause a severe allergic reaction in people with allergy to peanuts. In Europe it is a requirement to disclose if lupine flour is an ingredient in food products.
Perhaps you may want to add a precaution to your article.
Do you have a suggestion for a substitute? When I use almond flour my cookies are very crumbly. Thanx!

I have not come across Lupin Flour before! I live in France so I tried to check it out on Amazon.fr But no joy….it tried selling me some pretty flowers !
Any alternatives you can suggest please as we reall6 miss something Keto to have with an afternoon coppa!

can I just sub more almond flour for the lupin flour? I havent been able to get any here in Canada, its always sold out
