This year has presented me with a new challenge as the holidays have rolled around:
How do I make candies, cookies, and the other desserts that I love having around during the holidays while still adhering to Trim Healthy Mama guidelines?
I've already posted about my absolute favorite THM holiday dessert recipe – Pecan Pie Bars – but as my sweet tooth seems to have exploded because of all of the delectable recipes posted on Facebook and Pinterest, when I saw BuzzFeed's recipe for M&M Buckeyes I knew that I had to modify them to be THM-friendly ASAP or I would be venturing down a dark rabbit hole of sugar addiction and breaking my almost 2 month sugar – free kick!
Thankfully, the THM cookbook gave me all of the tools that I need to modify this delicious concoction to THM specifications, and you guys:
It tastes amazing, if I don't say so myself!
So jump on the Stevia bandwagon, learn to THM-it-up without depriving yourself, and enjoy the holiday season with these THM Chocolate Peanut Butter Truffles {THM:S}
- ¾ cup Natural, No-Sugar Peanut Butter
- ¼ cup Melted Organic Butter
- ½ cup Gentle Sweet (could use as much as 1 cup...taste to decide)
- 1 bar Unsweetened Baker's Chocolate
- ¼ cup Gentle Sweet
- Combine the peanut butter, butter, and gentle sweet in a bowl.
- Using a cookie scoop, roll portion of the "dough" one by one and lay onto wax paper.
- Freeze the balls of peanut butter for 20 minutes, until firm.
- Melted the baker's chocolate in the microwave on low heat or on the stove using a double boiler. Add in a bit of coconut oil if you desire the consistency to be a little thinner.
- Dip the firm buckeyes in the melted chocolate, swirl around with a fork to coat, and then lay back on wax paper to harden. Once all of the buckeyes have been coated, place in the refrigerator for 20 minutes to harden.
- Enjoy!
