Keto Fudgy Brownies with Marshmallow Fluff
A delicious twist on classic brownies – and you've probably had them before if you've been to a church potluck – but made for the keto diet, sugar free, low carb, and a THM:S.
These crispy treats melt in your mouth, and have a pleasant crunch.
The keto marshmallow fluff layer has low carb crispy pieces inside of it, and then the entire bar is topped with yet another layer of fudgy chocolate.
My husband DEVOURED these, and my sweet tooth loved them as well, so I'm so excited to share them with you!
This simple recipe is what I call a “cheater recipe” – there's no shame in a recipe like this.
It uses a mix as it's base, then you add to it + customize to make it your own.
In this case, we'll make these crispy bars using a keto brownie mix as the base, which saves time and energy.

How To Make Keto Marshmallow Crunch Brownie Bars
Start by making mixing together the ingredients for the keto brownies according to the package instructions, in a large bowl.
Bake in a parchment paper lined 9×9 baking dish, or use coconut oil to make it non-stick.
After baking, set aside and let cool completely before starting on the marshmallows
Then, make the the marshmallows:
Start by blooming your gelatin with a bit of water.
While that happens, you'll make a simple syrup of allulose and water.
Finally, you'll combine the bloomed gelatin and the simple syrup and beat for 15 minutes, until light and fluffy!
Mix in the Catalina Crunch into the marshmallow fluff, then spread on top of the completely cooled brownies.
Place the marshmallow crunch-topped brownies in the refrigerator while you make the fudgy topping.
To make the chocolate topping, place the lily's chips and heavy cream in a microwave-safe bowl, the microwave on high for 1 minute.
Grab a whisk and stir the fudge until the melted chocolate is completely stirred into the cream, add a sprinkle of sea salt, then spread on top of the fudge bars.
Let rest until cool, then slice and enjoy!
