Keto Popsicles – Strawberry Cheesecake & Collagen
{Low Carb, Ketogenic, THM:S, Sugar Free}
These Keto Popsicles are Strawberry Cheesecake and packed with protein from collagen and cottage cheese! They're refreshing and sweet, yet healthy enough to eat guilt free!
I have lots of popular desserts on this site. From Keto 7-Layer Bars, and Chewy Keto Snickerdoodles, to Keto Yellow Cake that you would swear came from a bakery, and The Best Keto Brownies you've ever tasted.
But let's face it: most of these are “winter” desserts.
What do I mean by that?
Well, most of my desserts require actually turning on the oven and baking (except for my Blackberry Bliss Bars) – which is awesome during the winter – but during the summer I will go a month at a time without actually turning mine on! I don't want to heat up the house, and I'm guessing many of you don't either!
So, I've decided to to a mini-series on no-bake desserts in honor of SUMMER!
These Keto Popsicles are the first in the series. Made to taste like Strawberry Cheesecake, but packed with protein from collagen and cottage cheese.
And they're so easy to make that my 5-year old was not only able to help me make them, she had a blast helping mom in the kitchen!
How To Make Keto Popsicles
If you've been around here long, then you'll probably know that I definitely prefer easy to make desserts, dinners, sides, well…..everything, really.
And these popsicles are no exception.
One of the things that I love about Keto Popsicles is that they are SO easy to make – you just pop your favorite ingredients in the blender, blend well, pour into a popsicle mold, and freeze!
A couple of things you will need:
A good blender. The one you have in your kitchen will work, don't get me wrong. But I do want to encourage you to at least consider investing in a really good blender like a Vitamix or Blendtec.
When I bought my Vitamix 2 years ago at Costco, I kid you not I was walking through Costco with said blender in my cart and was stopped by no less than 10 Grandma-ish ladies just gushing about how much I would love it and NEVER have to buy another blender.
Well those ladies were right, because I'm never going back to a cheap blender.
If you're curious, this is the Vitamix I have, and I recommend it 1,000%.
Far less of an investment, but even more necessary for this recipe, is popsicle molds. I bought the molds below, and not only are they affordable, they have held up great.
I use MyFitnessPal to track the macros for all my recipes, and I suggest that everyone do so when creating something “off-script” like popsicles. It's just to be sure you didn't throw a tad too much fruit in and jacked up your carbs for the day 🙂

With all that technical stuff out of the way, here's what you'll need to make Keto Popsicles {Strawberry Cheesecake & Collagen}
Almond Milk
Strawberries, halved
OOO Flavors Strawberry Extract {optional, for a stronger strawberry taste}
Collagen {I recommend Perfect Keto or Custom Collagen}
Full Fat Cottage Cheese
Liquid Stevia (or more, to taste)

Ingredients
- 1 cup Almond Milk
- 2 cups Strawberries, halved
- 1 dropper OOO Flavors Strawberry Extract {optional, for a stronger strawberry taste}
- 10 (10g) Scoops Collagen
- 2 cups Full Fat Cottage Cheese
- 10 drops Liquid Stevia (or more, to taste)
Instructions
- Place all ingredients in a blender and blend until smooth.
- Pour into your popsicle molds - remember to insert your popsicle sticks! - and freeze for 4 hours or until firm.
