Low Carb Balsamic Vinaigrette

I'm making a refreshing Low Carb Balsamic Vinaigrette that I fully plan on putting over a refreshing strawberry spinach salad chock full of pecans, feta cheese, and onions.  It's going to be epic.


Low Carb Balsamic Vinaigrette

Today is the first day of spring, or so they tell me.

I don't believe them, since the weather here in Southern Illinois is absolutely freezing and dreary.  I don't like it…

But I'm rebelling against the weather with my food choices, and making a refreshing Low Carb Balsamic Vinaigrette that I fully plan on putting over a refreshing strawberry spinach salad chock full of pecans, feta cheese, and onions.  It's going to be epic.

This is not a new recipe to me, just new to Fit Mom Journey, because as I whipped up this super simple dressing, I realized that I had never shared it with ya'll – and of course I have to fix that ASAP.

It's cheap and easy to make, keeps well in the refrigerator, and provides the perfect ratio of sweet to tangy to go over any number of salads.

To me, it says SUMMER.

Here's what you'll need:

1/4 cup Balsamic Vinegar
1/4 cup Extra Virgin Olive Oil
1 T Dijon Mustard
2 T Golden Lakanto Sweetener
1/2 tsp Garlic Powder
Salt & Pepper, to taste

As promised, it's super easy to make:

Mix all the ingredients in a salad dressing shaker and shake well. Let sit for 5 minutes or so, then shake vigorously again, making sure the Golden Lakanto is dissolved.
Serve over a refreshing salad & enjoy!

Ingredients
  • ¼ cup Balsamic Vinaigrette
  • ¼ cup Extra Virgin Olive Oil
  • 1 T Dijon Mustard

    I agree, balsamic vinaigrette with crisp berry salads in summer are A+! I will definitely try the recipe but my question for you/this recipe is – why the Lakanto? versus something like Swerve? and 2T?? Seems like a lot of sweetener…

      Swerve would work just was well! I prefer my dressings a bit on the sweet side (that incurable sweet tooth, lol) but you could definitely cut down on the sweetener!
