Slow Cooker Beef Pot Roast
{Ketogenic, Low Carb, THM:S, Grain Free}
Sundays are for pot roast, but you don't need to miss out if you're low carb or keto. Slow Cooker Beef Pot Roast requires minimal effort for maximum flavor, and some clever swaps will make up for not having potatoes.
Growing up, Sundays were pot roast days. My mom would start her slow cooker before we left for church, and by the time we returned the house was filled with the most amazing smells of Sunday pot roast.
Usually that pot roast sat on a bed of potatoes, carrots, and celery. And my mom would take the drippings in the bottom of the slow cooker and thicken them up to make gravy.
My Slow Cooker Beef Pot Roast is very similar to my mom's, but with some cleaner, low carb swaps. I kept all the flavor and almost none of the carbs.
Notes on The Beef
In our house, we've eliminated all convention beef in favor of high quality grass-fed and grass-finished beef.
But to be honest, I don't have time to shop around for great beef – since the stuff Walmart carries isn't worth the price – and so I've come to rely on ButcherBox to deliver great beef right to my door.

Ingredients for Slow Cooker Beef Pot Roast
3-4 lb Chuck Roast (I used ButcherBox)
Baby Radishes
Carrots, peeled and sliced
Celery, diced
Onion, diced (My veggies came from Misfit Market – save 25% HERE)
Primal Palate French Onion Seasoning Mix
Celtic Sea Salt
Pepper
Garlic Powder
Directions for Slow Cooker Beef Pot Roast
Place all of the vegetables in the bottom of the slow cooker, sprinkle with salt and pepper.
Set the roast on top of the vegetables, then sprinkles with salt, pepper, garlic powder, and the French Onion Seasoning Mix.
Cook on low for 8 hours, then shred the pot roast and serve.

Ingredients
- 3 lb Chuck Roast
- 16 oz. Baby Radishes
- 2 Carrots, peeled and sliced
- 4 stalks Celery, diced
- 1 medium Onion, diced
- Primal Palate French Onion Seasoning Mix
- Salt
- Pepper
- Garlic Powder
Instructions
- Place all of the vegetables in the bottom of the slow cooker, sprinkle with salt and pepper.
- Set the roast on top of the vegetables, then sprinkles with salt, pepper, garlic powder, and the French Onion Seasoning Mix.
- Cook on low for 8 hours, then shred the pot roast and serve.
