Keto Unicorn Blondies Made from scratch by my daughter's request! Made with a chewy blondie base, colored keto white chocolate chips, and sugar free sprinkles, these are such a fun dessert!
Keto Unicorn Blondies
My 6 year old's 7th birthday is coming up soon and she has requested Unicorn Blondies!
I had no idea what a Unicorn Blondie was when she asked, but I was imagining they involved sprinkles, lots of colored chocolate chips, and the best, chewiest keto blondie you can imagine.
Let's talk sprinkles first.
If some extra carbs aren't a big issue to you, you can use ordinary sprinkles found in the grocery store.
Jimmies will work but confetti sprinkles will hold their color the best if you can find them.
If you would like to stay with cleaner, keto sprinkles, I recommend The Sprinkle Company, which can be found on Etsy.
Their sprinkles are BEYOND delicious and have tons of options and vibrant colors.

And For The Colored White Chocolate Chips…
Now, if we want these blondies to look like they a unicorn was LITERALLY there, we need colored chocolate chips to include in the batter.
For these, I used ChocZero's Keto White Chocolate Chips.
I melted them down and tempered the chocolate, then split it into 3 bathes and added food coloring.
Then, I poured it into these chocolate chip molds.
As you can see, I messed up tempering the first batch (hence the white pieces throughout) and then forgot to take pictures of the batch I got right! Hopefully when I make these for my daughter's birthday I'll actually remember to take pictures of what they look like correctly done!
Ingredients for Keto Unicorn Blondies:
Almond Flour
Oat Fiber (or ground Flaxseed)
Coconut Flour
Baking Powder
Lakanto Baking Sweetener (see substitutes below)
Sweetleaf Stevia
Pinch of Salt
Stevia Sweetened White Chocolate Chips {see options below}
Eggs
Butter, softened
Vanilla Extract
Keto Spinkles of choice
Food Coloring
Supplies Needed:
9×9 Pan
Chocolate Chip Molds
Double Boiler (optional, but makes melting chocolate go much smoother)

How To Make Keto Unicorn Blondies
First, before you start to make the blondies, you'll need to make the colored chocolate chips.
Melt the white chocolate chips, then divide into 3 different bowls.
Add food coloring to each batch, then spread into the chocolate chip molds. Set aside to cool and harden, preferably overnight.
When the chocolate chips are cooled, prepare the bondie batter. Gently stir in half the sprinkles and 2/3 of the chocolate chips.
Spread into the 9×9 pan then top with the leftover sprinkles and chocolate chips.
Bake, then allow to cool completely before cutting and removing from the pan.

Ingredients
- Almond Flour
- Oat Fiber (or ground flaxseed)
- Coconut Flour
- Baking Powder
- Lakanto Baking Sweetener (see substitutes below)
- Sweetleaf Stevia
- Pinch of Salt
- Stevia Sweetened White Chocolate Chips (see options below0
- Eggs
- Butter, softened
- Vanilla Extract
- Keto Spinkles of choice
- Food Coloring
Instructions
The day before, prepare the colored white chocolate chips.
Melt the chocolate in a double boiler, then split into 3 bowls. Add food coloring of choice, then spread into chocolate chip molds. Set aside to cool, preferably overnight.
When cooled and solidified, release the chips from the molds and mix together to get them ready for the blondies.
When ready to make the blondies, preheat oven to 325. Grease a 9x9 (or 8x8) pan and set aside.
Combine all ingredients except the chocolate chips and sprinkles in a medium mixing bowl.
Stir in the half the sprinkles and 2/3 of the colored white chocolate chips, then spread into the prepared square pan.
Top with the remaining sprinkles and chocolate chips.
Bake at 325 for 20-25 minutes, until a toothpick inserted in the center comes out clean.
Allow to fully cool before cutting and removing from the pan.
{As with most keto baked goods, these are even better after being allowed to sit at room temperature overnight.}
