Keto Angel Food Cake
{Low Carb, Ketogenic, THM:S, Sugar Free, Grain Free}
Keto Angel Food cake is a light and fluffy versatile cake made mostly with egg whites. It's light texture and flavor make it able to be used for a variety of purposes and during many seasons.
I LOVE chocolate.
Well, chocolate, caramel and peanut butter.
At least I used to.
I still enjoy those strong sweet flavors, but 3 years of adhering to a Ketogenic Diet have really lowered my tolerance for sweets tremendously.
More often than not, I find myself craving less sweet desserts, and incorporating low carb fruits instead of my old favorite flavors.
One of those cravings has been a good angel food cake with strawberries and a good whipped cream – f0r real!
The strawberries and whipped cream are easy, so now it's time to make an awesome Keto Angel Food Cake.
Ingredients for Keto Angel Food Cake
12 Egg Whites
1/2 cup Whey or Egg White Protein Powder {some unflavored collagens can work as well}
2 tsp. Cream of Tartar
1/4 cup Erythritol or Allulose {Powdered} – I used this one
1/2 dropper Sweetleaf Stevia
3/4 cup Almond Flour
1/4 cup Coconut Flour
1 tsp. Vanilla Extract
1/4 tsp. Almond Extract {optional}
1/4 tsp. Salt

How To Make Keto Angel Food Cake
First, you'll need to make sure you're using the correct pan. The Angel Food Cake Pan I referred to above is also called a tube pan, and it is used for cakes that need structure to climb the sides of the pan. Then when the cake cools, it maintains it's structure because it was able to cool in the pan shape.
So basically, you really need this pan.
Sure, you can put the batter in a 9×9 regular pan, but it will fall in the middle.
First, you'll sift the flour, protein powder and sweetener (in separate bowls) and discard any clumps.
Then, you'll beat the egg whites until frothy, at which point you'll add the vanilla extract, sweetener, salt, and cream of tartar. Keep beating the whites, while adding in the almond extract and sweetleaf stevia.
Continue beating until the egg white mixture forms high soft peaks – not stiff peaks like meringue, you want them a little soft – then gently fold in the flours 1/4 cup at a time.
Pour the batter into the dry tube pan, then bake for 50-60 minutes.
Right out of the oven, you'll turn the pan over and let it cool completely upside down. Cut into portions with a serrated knife, and serve however you like, but my favorite way is with strawberries and keto whipped cream!
