Bacon Wrapped Chicken Cordon Bleu

An easy and tasty family dinner, Bacon Wrapped Chicken Cordon Bleu. Chicken breast is rolled up with ham, swiss cheese, and covered in bacon for the juiciest, tastiest chicken cordon bleu served with a homemade, ketogenic honey dijon cream sauce.
Chicken Cordon Bleu is one of those super simple meals that anyone can put together.
Even better, it's fancy enough for company, but easy enough for a quick weeknight.
And my personal favorite: it can be made ahead of time, frozen, then cooked at your leisure.
My version is a Bacon Wrapped Chicken Cordon Bleu – because keto, that's why –

To make this dish even better, I added a homemade keto honey dijon cream sauce to bump up the flavor factor – it's one of my go-to sauces!
Ingredients for Bacon Wrapped Chicken Cordon Bleu
Chicken Breasts
Bacon
Ham
Swiss Cheese
Salt & Pepper
For the Honey Dijon Sauce:
Mayo {Avocado Oil or Homemade}
Dijon Mustard {I used this one}
White Vinegar
Cayenne Pepper
Lakanto Powdered Sweetener {Or 1 dropper Sweetleaf Stevia}, start with 1 Tbsp. and adjust for sweeteness preference.
How To Make Bacon Wrapped Chicken Cordon Bleu
Cut each chicken breast in half. Pound out to 1/4″ thickness.
Sprinkle each tenderized chicken breast with salt and pepper, then lay 2 slices of ham and one slice of swiss cheese on top.
Roll the ham and swiss up inside of the chicken breast, then wrap in 2 pieces of bacon to secure the chicken closed. Rest with the loose bacon side down on a metal rack inside of a baking dish.
Bake, mix up the honey dijon cream sauce, then serve!

Ingredients
- 4 Chicken Breasts
- 16 pieces of Bacon
- 16 slices Ham
- 8 slices Swiss Cheese
- Salt & Pepper
- For the Honey Dijon Sauce:
- 1/4 cup Mayo {Avocado Oil or Homemade}
- 1/4 cup Dijon Mustard {I used this one}
- 1 Tbsp. White Vinegar
- 1/4 tsp. Cayenne Pepper
- 1-2 Tbsp. Lakanto Powdered Sweetener {Or 1 dropper Sweetleaf Stevia}, start with 1 Tbsp. and adjust for sweeteness preference.
Instructions
Cut each chicken breast in half. Pound out to 1/4" thickness.
Sprinkle each tenderized chicken breast with salt and pepper, then lay 2 slices of ham and one slice of swiss cheese on top.
Roll the ham and swiss up inside of the chicken breast, then wrap in 2 pieces of bacon to secure the chicken closed. Rest with the loose bacon side down on a metal rack inside of a baking dish.
Bake at 350 for 25-35 minutes, until the internal temperature reaches 165.
Make the honey dijon cream sauce by mixing up the mayo, sweetener, dijon mustard, vinegar, and cayenne.
Slice the cooked chicken, drizzle the cream sauce over the slices, and serve.
