Keto Apple Crisp

This delicious Keto Apple Crisp is a crowd-please whether you're surrounded by a keto crowd or not! Keto Apple Crisp is a tradition in our family and is delicious served warm, with cold keto ice cream, and a keto butterscotch sauce.
I have made a bunch of various keto mock apple desserts with squash, zucchini, etc, but none of those substitutes really come close to using Chayote squash.
These small squash can be readily found in grocery stores such as Walmart and Kroger, and are relatively inexpensive. They're even about the size of an apple!
Cut one open, and you'll notice a very mild green apple smell, as well as a firm texture, perfect for making mock apple desserts with!
You should wear gloves when preparing your chayote squash, since the skin can irritate some individuals skin, but other than that they are very easy to prepare!
I've topped my Keto Apple Crisp with a buttery almond flour and pecan topping that mimics that sweet oatmeal topping my mom used to make at home growing up.

Here's what you'll need:
For The Filling:
4-5 Chayote Squash, skin removed, cored, and cubed
1/4 cup Lakanto Golden Sweetener (Classic will work also)
2 tsp. Cinnamon
2 tsp. Apple Extract, if desired.
For the Topping:
1/2 cup Almond Flour
1/2 cup Pecans halves & pieces
1/4 cup Lakanto Golden sweetener (classic will work also)
1/4 cup Unsalted Butter, softened
Optional: Keto Butterscotch sauce & Basic Keto Vanilla Ice Cream
Directions:
Preheat oven to 350. Grease a 9×9 pan and set aside.
Place the prepared Chayote Squash in your instantpot with 1 cup of water. Set the valve to “sealing” and cook for 5 minutes on high pressure. When finished, do a quick release, and pour the cooked squash out into a colander to drain.
Prepare the topping: combine all topping ingredients in a bowl and mix until crumbly.
To Assemble: If using the apple extract, place the drained squash and the extract in your prepared pan and mix it with the apple extract. Sprinkle the sweetener and cinnamon over the squash.
Top with the crumbly topping, then bake at 350 for 1 hour.
