Today is an exciting day!
I've wanted to create a fluffy Keto Biscuit recipe for years now, but after many {so, so very many} failed attempts, I finally got a burst of energy this last week and decided to take making biscuits back to the basics with Grandma's recipe for old fashioned biscuits.
It took a few attempts, and I ultimate got rid of 6 potential ingredients, in favor of using simple, cold ingredients – just like Grandma did.
Keto Biscuits Ingredients
The most important thing here, rather than the brand of ingredients I used, is to make sure that you ingredients are cold.
I used Blue Diamond Almond Flour
Celtic Sea Salt
As well as Cold egg Whites, baking powder, and grass-fed butter.
In addition, this recipe uses a food processor to combine the ingredients. You can also cut the butter and other ingredients in by hand, but I find the food processor is much easier on my tired hands.

Keto Biscuits
These soft and fluffy Keto Biscuits take less than 30 minutes from start to finish, and require no special ingredients. Husband approved!
Ingredients
- 1 cup + 2 Tbsp. Almond Flour, chilled
- 2 Tbsp. Cold, Salted Butter
- 1 tsp. Baking Powder
- 3/4 cup Cold Egg Whites
- 1/4 tsp. Salt
Instructions
Chill your almond flour and butter in the fridge for 20 minutes in your food processor's bowl.
Once chilled, pulse the almond flour and butter in your food processor until the butter has been cut in enough that it forms pea-sized pieces.
Add in the baking powder and salt, pulsing once more to combine.
Gradually add in the egg whites while pulsing the dough, until everything is just combined. Do not over process the dough - don't worry it will be lumpy, and that's ok.
Use a cookie scoop to place the biscuits on a parchment paper lined baking sheet, then bake at 400 for 12-14 minutes, until golden brown.
