Keto Brownie Christmas Trees
If you've been in any store lately, you'll know that fall decorations are coming down and *gasp* Christmas decorations are going up!
I know some will rail against them being up this early, but frankly, I LOVE it!
Christmas is just so sparkly and fun. I have amazing Christmas memories from my childhood, and I just really love the magic of the season.
In addition to the Christmas decoration and presents, we're starting to see Christmas treats line the aisles – and many special displays of them too!
So I'm putting together a Christmas treat series that is chock full of sugar-free, low carb, ketogenic treats that are JUST like the real thing!

Ingredients for Keto Brownie Christmas Trees
As promised, I have 3 different versions of this recipes to choose from, ranging from using boxed mixes to working completely from scratch. Here's your choices:
Easiest method:
1 Keto Brownie Mix of Choice: My absolute favorite is Lakanto Brownie Mix. Grab a mix HERE and use code FITMOMJOURNEY to save $$ on your purchase!). BirchBenders brownie mixes can be found in most Walmarts now, Swerve brownie mix is a solid choice found frequently, and Simple Mills makes a great paleo brownie mix.

Sprinkles of choice: We don't use enough sprinkles in our house to worry about the carbs in them. But if you are, here is a great option.
Green Food Coloring: pretty self explanatory, but here is what I used.
Semi-Homemade Method:
For this option, we'll either use a boxed brownie mix (see above) + homemade frosting.
Or, we'll make homemade brownies + store-bought frosting (keto option for this can be found above)
Totally Homemade:
Full disclosure, the fully homemade method is what I chose for the pictures in this recipe. But don't feel guilted into doing what I did. Here are the ingredients for the fully homemade version:

Lily's Milk Chocolate Chips
Almond Flour
Coconut Flour
Cocoa Powder
Baking Powder
Lakanto Baking Sweetener or Allulose
Eggs
Pinch of Salt

How To Make Keto Christmas Tree Brownies:
The full recipes with printable instructions can be found at the bottom of this post.
Instructions for Easiest Method:
Prepare brownie mix according to the directions and bake in a pan line entirely with parchment paper so you can easily remove the entire pan of brownies for cutting.
Let cool, then remove the brownies from the pan and use a cookie cutter to cut Christmas tree shapes out of the brownies.
Mix green food coloring into the ready-made keto icing, and ice the brownie Christmas trees, followed by sprinkles.
For the other methods, follow the applicable directions below:
Start by making the brownies:
Preheat oven to 350. Line a 9×9 baking dish with parchment paper and set aside.
Combine almond flour, coconut flour, cocoa powder, salt and baking powder in a large bowl.
In a large, microwave safe bow, melt butter, then stir in chocolate chips until entirely melted.
Slowly mix the eggs and chocolate mixture into the dry ingredients.
Scrape brownie mixture into prepare pan and bake for 12-15 minutes until set in the center.
Allow brownies to cool fully before attempting to remove them from the pan, then cut out Christmas tree shapes with a cookie cutter.
Now, make your keto buttercream:
Add butter and cream cheese to a large mixing bowl. Beat for 2-3 minutes, until fully combined.
Add the salt and vanilla, followed by slowly adding the sweetener 1/4 cup at a time. Once all of the sweetener is added, beat for an additional 10 minutes until light, fluffy, and butter has lightened in color. Finally, add a few drops of green food coloring until icing has reached desired color.
Ice the cooled brownie Christmas trees with the green buttercream, followed by sprinkles of choice.
