Keto Chicken Parmesan Meatballs

A quick and easy dinner using ingredients you already have on hand, Keto Chicken Parmesan Meatballs are wonderful as dinner, as well as leftovers the next day.
Do you ever just NEED to use up some ingredients from your freezer? That's where I was at last week, staring at this package of 3 pounds of frozen ground chicken that I just did not know how I wanted to use it.
Now, I make some delicious Feta & Spinach Chicken Burgers, but those are more summer food in my mind, and for this frozen chicken I really wanted to make something warm and comforting.
I can't remember what exactly gave me the idea to make Chicken Parmesan Meatballs out of them, but really the idea is a simple one: take my original Mozzarella Stuffed Meatballs and modify them for chicken and all the wonderful flavors of chicken parmesan.
And they were good!
So I snapped a few pictures and am giving you the recipe here today.
Here's what you'll need:
Ground Chicken
Italian Seasoning
Parmesan Cheese
Eggs
Almond Flour
Organic Marinara (I used this)
Shredded Mozzarella Cheese

Directions:
Preheat oven to 350.
In a large bowl, mix together the ground chicken, Italian seasoning, parmesan, eggs, and almond flour. Then, use a cookie scoop to scoop 1-oz portions of them meatball mixture. Roll with your hands, then place in a 9×13 pan.
Bake at 350 for 25 minutes, until the outsides of the meatballs are browning. Remove from the oven, top with marinara and shredded mozzarella, then place back in the oven 5-10 minutes until cheese is bubbly.
Serve warm & enjoy!

- 3 pounds ground Chicken
- 2 T Italian Seasoning
- 1/4 cup Parmesan Cheese
- 2 Eggs
- 1/2 cup Almond Flour
- 1, 32 oz Jar Organic Marinara
- 2 cups Shredded Mozzarella Cheese
Instructions
Preheat oven to 350.
In a large bowl, mix together the ground chicken, italian seasoning, parmesan, eggs, and almond flour. Then, use a cookie scoop to scoop 1-oz portions of them meatball mixture. Roll with your hands, then place in a 9x13 pan.
