You've heard of Firecracker Shrimp, well now meet Keto Firecracker Chicken Meatballs. A super versatile and macros friendly protein, not to mention and easy weeknight dinner!
Keto Firecracker Chicken Meatballs
I'm sure you've heard of Firecreacker Shrimp.
It's sort of iconic.
But TBH, I don't like shrimp.
I know, I know.
So chicken it is!
Based off of Delish's firecracker chicken, but made perfectly keto-friendly, these meatballs are super simple to make, reheat well (yay, meal prep!) and come together super fast.
Serve them over cauliflower rice, or on the side of your favorite veggies for a complete meal!
Keto Firecracker Chicken Meatballs Ingredients
Ground Chicken
Minced Garlic
Sea Salt
Pepper
Eggs
Almond Flour
Paprika
Onion Powder
Green Onion
Hot Sauce (I used NobleMade Buffalo Sauce)
Allulose
Apple Cider Vinegar
Salt
Red Pepper Flakes (or more for added spice)

How To Make Keto Firecracker Chicken Meatballs
Combine the meatballs ingredients in a large mixing bow, and use your hands to mix until just combined.
Place the meatballs on a prepared baking sheet using a cookie sheet, and roll between your hands.
Bake until cooked through.
While the meatballs cook, stir the sauce ingredients together in a medium saucepan over medium high heat until it comes to a boil. Turn the heat down and let the sauce simmer for 8-10 minutes.
Remove from the heat and let cool. The sauce will thicken as it cools.
Once cool, and the meatballs are cooked through, coat each meatballs in the firecracker sauce, then return to the oven for 1-2 minutes.

Ingredients
- For The Meatballs
- 2 lbs Ground Chicken
- 1 T Minced Garlic
- 2 tsp. Sea Salt
- 1 tsp. Pepper
- 2 Eggs
- 1 cup Almond Flour
- 1 tsp. Paprika
- 2 tsp. Onion Powder
- 2 T Minced Green Onion
- For The Firecracker Sauce
- 1/2 cup Hot Sauce
- 3/4 cup Allulose
- 2 T Apple Cider Vinegar
- 1/2 tsp. Salt
- 1/4 tsp. Red Pepper Flakes (or more for added spice)
Instructions
- Preheat oven to 450 and line a large baking sheet with parchment paper.
- Combine the meatballs ingredients in a large mixing bow, and use your hands to mix until just combined.
- Place the meatballs on a prepared baking sheet using a cookie sheet, and roll between your hands.
- Bake until cooked through, 12-15 minutes.
- While the meatballs cook, stir the sauce ingredients together in a medium saucepan over medium high heat until it comes to a boil. Turn the heat down and let the sauce simmer for 8-10 minutes.
