Keto Sushi Bowl

Love sushi but gone keto? This delicious Keto Sushi Bowl was created to satisfy your every sushi craving with spices and low carb ingredients.
Do you miss sushi?
Only a few months before going keto, I fell in love with sushi – all the delicious flavors and textures!
But post-keto, rice is off limits, and the soy in many of the ingredients is a no-go for me personally as well ( more on that HERE)
My solution?
Keto-fy the ingredients and throw them in a bowl!
This Keto Sushi bowl is super easy to put together, and you can 100% control the ingredients that go in it. Salmon, cucumber, wasabi, siracha mayo, and whatever veggies your heart desires – so good!
Here's what you'll need:
3/4 cup Cauliflower Rice (I used a steamer)
1/2 cup Smoked Salmon
1/4 cup Cucumber, diced
1/2 cup Avocado
1/2 cup sliced Red or Yellow Peppers
2 sheets Seaweed
2 tsp. Coconut Aminos
Salt & Pepper, to taste
Sriracha Mayo (just Sriracha and Mayo)
Directions:
Steam the cauliflower rice and season with salt and pepper. Place prepared cauliflower rice in the bottom of a bowl and top with coconut aminos.
Layer in the smoked salmon, cucumber, avocado, and seaweed in desired amounts.
Prepare Sriracha mayo by combining Sriracha and Mayonnaise to desired spice level.
Drizzle over sushi bowl and enjoy!

Is that yellow bell pepper in the bowl with the other ingredients? I don’t see anything in the ingredient list that it could be.
