Keto Zucchini Bread

A delicious Keto Zucchini Bread that goes perfectly with grass-fed butter – and is a great way to use up all that extra zucchini from the garden!

In all seriousness, I did get in a slice of this bread before photographing it, and before my dog stole the other half. I don’t know what has gotten into him, but I’m really NOT ok with his comfort level around my kitchen.
I’m still not sure what we’re going to do about the dog stealing food, but I am sure that you’re going to love my Keto Zucchini Bread.
It started as a craving – after all, who didn’t grow up with zucchini bread? – and ended in this delightful creation.
Here’s what you’ll need:
Butter {preferably grass-fed}
Allulose {or sweetener of choice}
Lakanto Granular Sweetener
Eggs
Almond Flour {I used this kind}
Coconut Flour {I used this brand}
Grated Zucchini
Baking Powder
Cinnamon
Ginger
Xanthan Gum
Directions:
Preheat oven to 325. Grease a loaf pan with coconut or avocado oil cooking spray and set aside.
In a large mixing bowl, cream together the butter, allulose, and lakanto sweetener until light and fluffy.
Add in the eggs, one at a time, beating until combined, then stir in the grated zucchini.
Dump the almond flour, coconut flour, baking soda, baking powder, cinnamon, ginger, and xanthan gum on top of the wet ingredients, then mix well.
Scoop the batter into the loaf pan (It will most likely be thick) and spread out evenly.
Bake at 325 for 50-60 minutes, until set in the center. Remove from the oven and let sit in the loaf pan until completely cool – and be sure to keep an eye on your dog!
Enjoy with butter, my favorite topping.

Ingredients
- ½ cup butter, softened
- ¼ cup Allulose
- ¼ cup Lakanto Granular Sweetener
- 3 Eggs
- 2 cups Almond Flour
- ½ cup Coconut Flour
- 1 ½ cups Grated Zucchini (approx. 1 medium zucchini)
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 2 tsp. Cinnamon
- 1 tsp. Ginger
- ½ tsp. Xanthan Gum
