Ketogenic Sugar Free Sprinkles

What are cupcakes without sprinkles? My question to bring all things that were delicious about carb-loaded baked goods has brought me to create Ketogenic Sugar Free Sprinkles that you can whip up quickly and enjoy with many different desserts.
I've been playing around with making sprinkles that are ketogenic, sugar-free, and vibrantly colored for quite a while now.
That sounds dramatic, but that's how most of my recipes goes. Very rarely are they winners on the first go-round.
The reason I've been wanting to create sprinkles is because I have TONS of recipes I want to make that include them:
- Cupcakes
- Funfetti Cake/Birthday Cake
- Truffles
- and so much more!
After creating my Best Keto Vanilla Cake (which is AWESOME, by the way. You should totally check it out) the next step towards these wish list desserts was sprinkles.
Luckily, after ruling out several different – more difficult – methods, I landed on a super easy way to make them.
I used regular food coloring for my sprinkles, but if using natural colors is a priority for your family, I suggest using these India Tree Natural Decorating Colors. Your colors won't be quite as vibrant as mine, but they will be natural, instead of artificial.

The method I used for these sprinkles is first whipping an egg white and sweetener, then adding coloring, a bit of thickener and finally food coloring.
You'll then pipe the mixture onto wax paper in lines, let it dry, then put the strips into a ziploc bag and break them up into as large or small of pieces are you want.
So, you will need icing bags (either disposable or reusable), a small circle icing tip, and then the coupler that holds the icing tip on the end of the bag.

Here's what you'll need:
1 Egg White
3 T Vanilla Flavored Protein Powder
2 T Lakanto Powdered Sweetener
1/2 tsp. Xanthan Gum
4-5 drops food coloring of choice
Directions:
In a mixing bowl with a mixer/stand mixer, whip the egg white, sweetener, and xanthan gum. It will be lump at first, but keep whipping and everything will incorporate. Whip until the egg white mixture forms stiff peaks.
Add in the protein powder and food coloring, mixing to combine, then scrape it into an icing bag with the smallest round tip on the end.
Pipe in lines onto parchment paper, then let dry on the counter for 4-5 hours, until hard and dried.
Finally, transfer the sprinkle lines into a ziploc bag and “crunch” until the sprinkles reach the desired size.
