A 30 minute dinner for the whole family and a variety of diets, Low Carb Sausage and Vegetable Sheetpan Dinner is healthy and heart – and makes fabulous leftovers!
Low Carb Sausage and Vegetable Sheetpan Dinner
Most days, I love cooking. I love creating new exciting flavors, fun combinations, and experimenting with new foods.
But occasionally, when it's been a day, or when I'm just tired of cooking, sheetpan dinners are necessary for my sanity.
I usually have some sort of sausage or kielbasa in the freezer to go with eggs, or to literally eat without even sitting down because I'm crazy busy.
I've been doing a lot of my shopping at Sam's Club lately, and I'm grateful that they have several clean and macro-friendly sausage options to choose from.
I chose to use a combination of peppers, brussels sprouts, mushrooms, and potatoes (for the hubs) along with quite a few spices – because what is a meal without spices?
This meal is:

- Keto (omit the potatoes)
Ingredients for Low Carb Sausage and Vegetable Sheetpan Dinner
Sausages (I used Member's Mark Chicken Apple Sausage), sliced
Brussels Sprouts, halved
sliced Mushrooms
Diced Red Bell Pepper
Garlic Powder
Dried Oregano
Paprika
Salt & Pepper to taste
Fresh Parsley, finely chopped
Avocado Oil
Optional Vegetables:
Cauliflower Florets
Broccoli Florets
Carrots
Zucchini
Yellow Squash
How To Make Low Carb Sausage and Vegetable Sheetpan Dinner
Line a large sheet pan with parchment paper and preheat oven.
Chop sausage, and dice vegetables, putting them into a large bowl as you go.
Toss with the oil, then pour onto the baking sheet.
Mix together all of the spices, and sprinkle generously over the sheetpan dinner.
Bake for 15 minutes, until the sausage starts to get crispy. Toss, then bake another 10 minutes.

Ingredients
- 6 Sausages (I used Member's Mark Chicken Apple Sausage), sliced
- 12 oz Brussels Sprouts, halved
- 12 oz sliced Mushrooms
- 1 Diced Red Bell Pepper
- 1 T Garlic Powder
- 1 T Dried Oregano
- 1 T Paprika
- Salt & Pepper to taste
- 1/4 cup Fresh Parsley, finely chopped
- 1/4 cup Avocado Oil
Instructions
