I frequently ask, on my Fit Mom Journey Facebook page, what ya'll would like to see. Recipes, articles, baking tips, meal plans, etc.
And one request that I've gotten over and over again – but haven't been able to deliver on – is for Keto Cutout Sugar Cookies.
Until now.
Keto baking is tricky. Low carb flours require more liquid, more eggs, and have very tricky structure. Baking with them has become easier over the years, but that doesn't mean I've come up with baked goods that have the same consistency batter or dough that high-carb baked goods have.
Meaning keto cutout sugar cookies are tricky, to say the least.
BUT after close to 2 dozen failed batches, I finally found a combination that not only combines into a dough that can be rolled out, dusted with extra almond flour, cut out, and baked, they also come out of the oven pillowy and delicious!
Finally, my dreams of perfectly cutout and decorated Christmas cookies can become a reality!
Ingredients for Keto Cutout Sugar Cookies
Almond Flour
Coconut Flour
Baking Powder
Baking Soda
Eggs
Lakanto Granluar Sweetener
Sea Salt
Sweetleaf Stevia
Vanilla Extract
Cream Cheese
Butter

Keto Cutout Sugar Cookies

Ingredients
- 2 cups Almond Flour
- 2 Tbsp. Coconut Flour
- 2 tsp. Baking Powder
- 1 tsp. Baking Soda
- 2 Eggs
- 1/2 cup Lakanto Granular Sweetener
- 1/4 tsp. Celtic Sea Salt
- 1 dropper Sweetleaf Stevia
- 1/2 tsp. Vanilla Extract
- 4 oz Cream Cheese
- 1 Tbsp. Butter
Instructions
- In a large mixing bowl, cream together the cream cheese, softened butter, and lakanto granular sweetener.
- Add in the eggs, sea salt, sweetleaf stevia, and vanilla extract.
- In a separate bowl, combine the almond flour, coconut flour, baking powder, and baking soda.
- Mix together the dry and wet ingredients, then turn out onto plastic wrap, form into a ball, wrap with plastic, and let rest in the refrigerator for 40 minutes to 1 hour.
- When the dough has chilled, preheat oven to 350.
- Roll out the chilled dough with extra almond flour and a rolling pin to 1/4" thick, then cutout in the desired shape.
- Place the cutout cookies on a baking sheet lined with parchment paper, then bake at 350 for 18-22 minutes, until the edges of the cookies just start to brown.
- Remove from the oven and cool on wire racks. Frost when cool.
