Easy Slow Cooker Pulled Pork
{Low Carb, Ketogenic, THM:S}
Making easy Slow Cooker Pulled Pork that is ketogenic, low carb, tender, and flavorful is a snap! With a perfectly balanced blend of spices and an almost hands-off approach to cooking, this protein will have a permanent place in your kitchen!
I've made lots of pulled pork in my years as a wife and mother, but I have to share this easy Slow Cooker Pulled Pork Recipe today because it's the best I've made!
As with most pulled pork recipes, it's fairly simple, but the method and spice blend {which is sugar-free} make it an incredible slow-cooker protein that is wonderful to keep on hand for quick dinners, protein-filled snacks, and can be used in many different recipes.
Although my pulled pork recipe could be special occasion food (pulled pork nachos, anyone??), for the most part I throw pulled pork in the slow cooker when I know we have a busy night ahead of us and I won't have time to stand over the stove to cook a meal.
Honestly, it's the spice blend that makes this recipe.
The spice rub used here has just the right kick of heat combined with a bit of sweetness from a keto-approved sweetener, and of course you can use more or less based on your tolerance for heat.

But enough about WHY you need to make this easy Slow Cooker Pulled Pork, let's get down to the HOW.
Here's what you'll need:
4 lb Pork Shoulder
3 T Smoked Paprika
2 T Lakanto Golden Sweetener
1 tsp. Black Pepper
1 tsp. Cayenne Pepper
2 tsp. Garlic Powder
2 tsp. Onion Powder
2 tsp. Celtic Sea Salt
1/4 cup Apple Cider Vinegar
3/4 cup Water
Directions:
Pat the pork shoulder dry. Combine the dried spices in a bowl and rub into all sides of the pork shoulder.
Pour the vinegar and water into the bottom of the slow cooker. Carefully add the spice-rubbed pork shoulder so you don't wash off all the spices.
Cover and cook on low for 8 hours, then remove the pork and shred. Add back into the slow cooker with about 1/3 of the juices to keep warm for serving.
