Eggroll in a Bowl

When it comes to meals you can prep beforehand or whip up for a quick dinner, you won't find a better, easiest, or more tasty recipe than Eggroll in a Bowl. Basically, it's egg roll fillings put in a bowl with your choice of protein, and slathered in my Crack Slaw Sauce, which I'll share with you in this recipe.
You've probably seen posts about this magical dish, Eggroll in a Bowl, or Crack Slaw, floating around Facebook, Instagram, and Pinterest. And most likely, the name drew you in because let's face it – the name gets attention.
Well this last weekend, I finally gave in to the trend and decided to try my hand at this infamous Crack Slaw to see if I liked it, wanted to tweak it, and make it my own.
And guys,
It's not just good…
It's Addiction.
When it comes to meals you can prep beforehand or whip up for a quick dinner, you won't find a better, easiest, or more tasty recipe than crack slaw. Basically, it's egg roll fillings put in a bowl with your choice of protein, and slathered in my Eggroll Sauce, which I'll share with you in this recipe.
First, you'll cook your protein of choice: ground beef, sausage, turkey, {marinated} chicken.
Then, saute coleslaw mix with garlic, sesame oil, salt, and pepper.
While the cabbage is cooking, mix up the Eggroll Sauce.
Finally, you'll assemble the crack slaw by tossing the cooked coleslaw mix with your protein, and drizzle on the sauce.
It's super-duper simple, uses no special ingredients, and the whole meal comes together in about 20 minutes.
Now, my Eggroll in a Bowl uses marinated chicken, but you do not have to do this step. No matter what protein you use, you can simply salt & pepper it, then cook through. I just like the marinade when using chicken because it tends to be dry and flavor-less. The marinade acts as a brine and infuses tons of Asian flavor, so if you have the time I definitely recommend it!
This recipe is Whole30 if you use compliant ingredients such as Primal Kitchen Mayo and Coconut Aminos. I've included substitutions where they are needed. It is also a THM:S Fuel, Low Carb, and Ketogenic.
Here's What You'll Need:
For The Marinade:
5 Pounds Boneless, Skinless Chicken Tenders or Breasts
1/2 cup Olive Oil
4 T Sesame Oil
1/4 cup Coconut Aminos
2 T Ginger
1/2 cup Rice Vinegar
For the Slaw:
2 T Toasted Sesame Oil
2 minced Garlic Cloves
3 Green Onions, sliced
1/2 large Onion, thinly sliced
14oz Coleslaw mix
Salt & Pepper to taste
For The Sauce:
1/4 cup Avocado Oil Mayo
1 T Powdered Lakanto Sweetener*
1/2 tsp. Fresh Ginger
1 tsp. Rice Vinegar
2 T Coconut Aminos
1/2 tsp Chili Paste (or more, for a spicier sauce)
Directions:
To Marinate the Chicken: combine all marinade ingredients in a ziploc bag and shake to combine. Drop the chicken in and let marinate at least 4 hours or as long as 24 hours.
While the chicken cooks, mix all of the sauce ingredients and set aside. You can double the sauce if you like, just depends on how saucy you like your crack slaw.
Cook the chicken in a bit of ghee or butter until cooked through. Set aside to rest.
Leave the skillet “dirty” with the chicken drippings, add in all of the slaw ingredients and saute until the cabbage and onions reach the desired tenderness. I like them to still have a bit of crunch.
Slice the chicken and add back to the skillet. Toss to combine.
Divide the crack slaw up into bowls, top with a few more green onion pieces if desired, then add the sauce!
*Sub 3 dates blended in 1/4 cup water for the Sweetener if Whole30
