Keto Broccoli Salad {THM:S, Low Carb, Ketogenic} Broccoli salad with bacon, mayo, and a hint of sweeteness has been around forever.  I can’t actually remember the first time I tried it...it’s just always been something I’ve been familiar with.  The best version, in my opinion, is the Amish version (don’t the Amish make everything better?).  Their dressing uses sugar, but I subbed that out for Lakanto Classic Monkfruit sweetener.

Broccoli salad with bacon, mayo, and a hint of sweeteness has been around forever.  I can’t actually remember the first time I tried it…it’s just always been something I’ve been familiar with.  

The best version, in my opinion, is the Amish version (don’t the Amish make everything better?).  Their dressing uses sugar, but I subbed that out for Lakanto Classic Monkfruit sweetener. It’s delicious, without the cooling effect that you often get from stevia.  Combine the sweetener with mayo, and some Apple Cider Vinegar, and you’ve got a sweet and tangy dressing that pairs deliciously with the broccoli, bacon, cheese, and onion.

This is a go-to salad for our family during the summer months, because it’s delicious cold (I may actually eat it solely for lunch on occasion), only gets better the longer it sits in the fridge and….

Drumroll please….

My 4 year old will eat it.

Seriously.  And that, in my book makes the recipe a winner on it’s own.

Here’s what you’ll need….

Ingredients:

1 cup Mayonaise
¼ cup Apple Cider Vinegar
½ cup Lakanto (more or less, to taste)
1 large head of Broccoli, chopped (3-4 cups)
1 cup Shredded Cheddar cheese
1 medium Onion, chopped
6 slices Bacon, Chopped

Directions:

In a large bowl, mix together the Mayonnaise, Apple Cider Vinegar, and Lakanto Classic.  Stir until the sweetener is dissolved into the mayonnaise.

Add the chopped broccoli, shredded cheddar, chopped onion, and chopped bacon, stirring well to combine – enjoy!

  • 1 cup Mayonaise
