Keto Chicken Broccoli Cheese Casserole
Sometimes you just need comfort in the form of food, and I understand that.

This recipe is one of my favorite for when I'm crunched for time, on a budget, or both.
And did I mention it freezes so, so well?
It can be made with chicken breasts, thights, rotisseries chicken, or even canned chicken!

How To Make Keto Chicken Broccoli Cheese Casserole
Preheat oven to 350. Grease a 9×13 pan and set aside.
Slice your chicken breasts in half thickness-wise so they cook faster. Season both sides with salt, pepper, and garlic powder.
Place 1-2 Tbsp. Avocado oil in a large skillet over medium-high heat. Brown each chicken breast 2-3 minutes on each side, until golden brown but DO NOT cook through. They will finish cooking in the oven. Chop chicken into bite-size pieces and set aside.
Set cooked chicken breasts aside and deglaze pan with chicken broth, scraping up the browned bits from the bottom (this is where all the flavor is!)
Bring chicken broth to a simmer then add in heavy cream, shredded cheddar, paprika, as well as more salt and pepper.
In a large bowl, mix together chicken, cheese sauce, broccoli, and cauliflower. Scrape into prepared pan, top with more shredded cheese, and bake at 350 for 30-40 minutes until cheese on top is bubbly and chicken is cooked through.

Ingredients
- 4 Chicken Breasts (~ 2 lbs)
- Salt, to taste
- Pepper, to taste
- Garlic Powder, to taste
- 1 cup Chicken Broth
- 1.5 cups Shredded Cheddar Cheese
- 1/2 cup Heavy Cream
- 2 tsp. Paprika
- 1 cup Steamed Broccoli
- 1 cup Steamed Cauliflower
Instructions
